Butternut Squash Hash Browns

You know we love our Butternut Squash around here. We usually go through one squash a week, and this time around I decided to make it for breakfast. If you're a butternut squash fan, KMW is the place for you.

I also put one of my latest favorite kitchen gadgets to use, the shredding disc on my food processor. I love that thing. Oh, I need to shred this block of cheese? 20 seconds and done. Shredded the heck out of some potatoes for this Bacon, Egg & Cheese Hash Brown Skillet. It can help you make coleslaw in no time at all. I'm a shredding machine lately, well I guess my food processor is more the shredding machine...you get it.

So get out your shredding attachment, shred up some butternut squash and make yourself some hash browns!

Scallops & Spaghetti Squash with Cream Sauce

Okay, so this isn't the prettiest photo on KMW, but look beyond the picture to the rich, creamy sauce on top of this Spaghetti Squash and Scallops. 

Spaghetti Squash will never taste exactly like pasta, but I definitely enjoy it as a substitute to reduce carbs. Not to mention, I'm a squash lover. This made for a great dinner the first night I made it, but I'd say the leftovers were even better. It gave the squash a little bit of time to soak up more sauce.

Roasted Butternut Squash and Pear Soup

One of my coworkers brought in a TON of pears and apples from his parents farm in Eastern Washington on Friday...needless to say I've been baking and cooking with them all weekend. So that's your warning, you are going to see a streak of apple and pear recipes. 

Now onto this soup, it cooled down today so I was in the mood for soup and decided to make a spin on my Butternut Squash & Shallot Soup. This time I roasted some pears and onions along with the squash and added in some fun garnishes; pepitas, gorgonzola crumbles and fried sage. That's right, fried sage.

Butternut Squash Macaroni & Cheese

Stovetop Butternut Squash Macaroni and Cheese

I can't believe I've had this blog for a year and I haven't posted any macaroni and cheese recipes, because I absolutely love mac and cheese and I've definitely had my fair share this past year. I think the issue is that I start shoveling it into my mouth as soon as it is out of the oven, leaving no time for pictures.

This stovetop butternut squash mac and cheese was inspired by Lauren over at Lauren's Latest, I'm always eyeing her recipes. Currently I have my sights on her Southwest Chicken Chop Salad and Cinnamon Bun Popcorn. Yes, Cinnamon Bun Popcorn.

Baked Butternut Squash Fries

Butternut Squash Fries

You already know I love butternut squash, well I also love french fries. Who doesn't? The attempt I made at a healthier alternative with these Butternut Squash Fries turned out great. That was our lunch Saturday, it's normal to eat fries for lunch right?

The best part was that these were really easy, cutting up the squash was the most difficult part, but the video I linked to in this post makes that part pretty simple too. I played around with thinner fries and wedges, I like mine crisp (hence some of the burnt parts you see in the picture) so I would recommend going the thin route. If you are more of a wedge type person, then of course go for the thicker cut!
