Green Monster Smoothie

Green Monster Smoothie

 

I know, I'm a little late to the Green Monster Smoothie bandwagon, but I am now officially onboard. I'm sure many of you know about the Green Monster Smoothie, but for those of you that don't it's essentialy a smoothie with some Kale or Spinach leaves thrown in. 

I've now served this twice to Mr. KMW and both times he asked with skepticisim 'you put green stuff in there?' Both time he took his first sip and said mmmm. You do not taste the 'green stuff', you just get the benefit of all of their nutrients! 

I'm not going to type up a recipe as there are a ton out there, but you could use my Peanut Butter Banana Smoothie or my Strawberry Green Tea Smoothie and just add 1 to 2 handfulls of Kale or 2 handfulls of baby spinach into the mixer with the other ingredients. Really, that's all there is to it! I've been adding it to the Peanut Butter Banana Smoothie.

Cucumber Feta Bites

Cucumber Feta Bites make for a healthy, easy and tasty appetizer. Can't beat that, can you?!

I made them for the Super Bowl, but they would work well for the holidays or any gathering really, they make for great finger food. They're also an easy appetizer to bring to a party, because they don't have to be heated up.

I'm always looking for healthier appetizer options so when I saw Katie's Cucumber Feta Rolls over at Good Life Eats they definitely jumped out at me. I ended up making bites instead of rolls since they would be easier to slice up and I also wouldn't have to deal with toothpicks. Avocado Toast with Tomato

I love avocados, and based on all of the visits and love I have received on this Avocado Chicken Salad post, you guys do too. I'm really glad we could find that common ground, I really see us having a future together.

This is a simple recipe that works for a healthy breakfast, lunch, a snack or even a light dinner. You could also leave the cheese off to make it even healthier. I had some pepper jack cheese on hand though and couldn't resist! I'm a sucker for cheese, especially if it adds some spice.

Here's the recipe for 1 toast, but I'm warning you know, you will most likely want to make more than 1!

Nutella & Mascarpone Crostini

Nutella & Mascarpone Crostini

Make this now and thank me later! I went to dinner at Dozzino's in Hoboken a couple of months ago and we ordered these Nutella & Mascarpone Crostini's for dessert. I haven't stopped thinking about them since so I decided to put the Nutella I had from the Nutella Swirl Blondies to use. Make them this weekend for the games, make them for your holiday parties or just make them at home alone so you don't have to share with anyone.  They are so easy and if you decide to share everyone will be impressed! Adjust the quantity based on how many you want to make and adjust the ratio of mascarpone to nutella based on your taste preferences.

Ingredients
1-1/2 cups mascarpone
3/4 cup nutella
1 baguette, sliced 

Directions
Preheat broiler (this will only take a couple of minutes). Place bread on baking sheet and place under broiler for 1-2 minutes on each side. Keep an eye on it as it will toast the bread quickly.

Stir together mascarpone and nutella. Try a spoonful, you know, just to make sure it tastes okay. Place a dollop of mascarpone and nutella mixture on toasted baguette.

Pumpkin Hummus

Hayley's pumpkin cupcakes inspired me to throw together a Gameday recipe that would also work for your Halloween parties this weekend. If you are trying to figure out something you can pull together quickly at the last minute this recipes is for you , it literally took me 5 minutes to make. This pumpkin hummus is not on the sweet side, it's definitely a savory appetizer or snack. Serve it with pita chips or veggies for dipping, or spread it on a sandwich.

Ingredients
1 15 oz can of pumpkin puree (not pumpkin pie filling)
2 tablespoons tahini
2 tablespoons lemon juice
2 cloves garlic
2 teaspoons olive oil
2 teaspoons cayenne pepper
1 teaspoon cumin
1 teaspoon salt
1 teaspoon ground cinnamon, plus more for serving
2-3 tablespoons parsley
pita chips, for dipping 

Directions
Combine pumpkin puree, tahihi, lemon juice,garlic, olive oil, cayenne pepper, cumin, salt, and cinnamon in a food proccesor and process until smooth. Add parsley and process until well combined. Sprinkle with cinnamon for serving and enjoy!
