Slow Cooker Butternut Squash, Chicken and Bean Chili

Remember when my husband confessed his love for squash? Well you've probably noticed that I took his words to heart and have been making a lot of squash since.

So when I was at a wedding a couple of weekends ago and someone mentioned they made a really good butternut squash chili in the slow cooker my ears perked. It led to me throwing some butternut squash and a handful of other random ingredients into the slow cooker Tuesday morning and coming home to a delicious dinner. I wasn't sure whether I should consider it a chili or a stew, but I'm going with chili, regardless it's REALLY good. It's in the slow cooker so it's easy and with most of my slow cooker recipes, it's even better leftover!

Remember, don't be intimidated by cutting up the butternut squash, this video that I shared in my Butternut Squash, Black Bean and Spinach Burrito post makes it easy.

Slow Cooker Mexican Chicken

I recently added a poll to my blog to see what type of recipes you guys are looking for and many of you have requested slow cooker recipes. So I'm really excited to share this easy Mexican Slow Cooker Chicken with you guys, it only has 5 ingredients!

My friend and co-worker, Holly, passed along this recipe and it's oh so good. Holly's a mom of 4, works and has a social life that puts mine to shame...the definition of a busy cook (and crazy woman). If you're looking for an easy and dependable weeknight recipe this one is for you. Not only is the recipe delicious, but it uses minimal ingredients, is hands off and since I'm not feeding a family of 6 it will pretty much last us the whole week. It's also really good leftover and you can eat the chicken straight up, throw it in a tortilla shell, eat it over rice or make some nachos.

Slow Cooker Indian Braised Chicken

When this recipe from Everyday Food was posted over on Bev Cooks I just had to try it, it was from one of my favorite magazines and involved a slow cooker. If you haven't checked out Bev's blog you should, I'm always drooling over her posts and she's crazy, in a good way. If you haven't checked out Everyday Food you should get on that as well, the recipes are never too difficult and it has a lot of great options for the busy cook. I have almost every issue since 2006 saved, it's pretty much the only thing I hoard (I'm a purger), but I love pulling old issues out and finding 'new' recipes to try. 

Onto the Indian Spiced Braised Chicken, this recipe is so easy I don't know if I can even consider it cooking. As always, it was great coming home to the smell of a delicious dinner in my apartment. Everytime I use my slow cooker I fall in love with it again, I really need to use it more.  Keep reading for the recipe with a few adaptions.

Soy Basalmic Slow Cooker Chicken

I know I have said this before, but it honestly always takes me 2 tries and a Google search to spell balsamic correctly. Okay now that I have that off my chest we can move on.

In preparation of our anniversary in a few weeks, we transported the top tier of our wedding cake from my parents freezer to our freezer this weekend. It's in a huge box, so this meant that I had to clear out a shelf of my jam packed freezer. So I thawed a lot of chicken, and decided I would figure out something to do with it in the slow cooker. 

This morning I woke up, realized I thawed 3 packages of chicken and needed to throw together something in the slow cooker before heading to work. The ingredients must have come to me in my sleep, because I thought quickly and came home to a delicious dinner. The more I use my slow cooker, the more I love it. As my husband put it tonight, our slow cooker is batting 1000. For all of you that have been requesting more easy and tasty slow cooker recipes, this one is for you.

Keep reading for the recipe, I've scaled it down a bit from what I actually did this time since most people don't need the amount of chicken I cooked. We're looking forward to eating the leftovers for lunch this week though!

Slow Cooker Pulled Buffalo Chicken Sandwiches

 

I have another Gameday recipe for you, and you should make it immediately. My husband is a buffalo wing connoisseur and these recieved his stamp of approval. My initial plan was to make these into sliders, but after not being able to find slider buns at 2 different stores I gave up since this would easily work with sandwiches. Where do you buy slider buns anyway?

Since these are made in the slow cooker they are so easy to make,  just throw a few ingredients in the slow cooker and have a finished product 8 hours later. One word of advice I have is do not make these when you'll be home all day. I work from home on Friday's and it was torture smelling the buffalo chicken all day long and having to wait until dinner to gobble it up.

I tried not to make them too spicy since my husband can't handle the heat like I can, he's more of a mild wings type of guy. These still came out spicy, just not too spicy, but please adjust the sauce ingredients to fit your tastes. The blue cheese dip to spread on the sandwiches helped balance out the spice nicely. Since I wanted to mix both light and dark meat this recipe makes way too much chicken for just the two of us, but it would be good for a crowd and I'm excited to find uses for it in other dishes.
