Oxtail Bourguinonne

I know I've talked to you all about Amanda before, whether it was a recipe recommendation, chili club, a beer recommendation, helping me drink beer or riding out Hurricane Irene. Well I hope you're not sick of hearing about her, because she made an amazing dinner for us last week.

Amanda's my best friend, we were roommates in college, roommates after college, and then we got married (not to each other, but to our lucky husbands) and ended up living in the same apartment building in Jersey City. Now that I'm moving, all I have to say is thank goodness for Face Time, so we can still drink wine 'together' while she helps me pick out which dress or shoes I should wear, all while living on opposite coasts.

Amanda wanted to make us a nice dinner before we head to Seattle in a couple of weeks, and she out did herself. I'm not exaggerating, the thought of the tender oxtail falling off the bone and the caramelized shallot mashed potatoes still makes my mouth water. And the wine was flowing!

Let's start with the first course, a Spicy Green Salad with Manchego and Pears. Just look at how pretty it is!

You already know I love butternut squash, well I also love french fries. Who doesn't? The attempt I made at a healthier alternative with these Butternut Squash Fries turned out great. That was our lunch Saturday, it's normal to eat fries for lunch right?

The best part was that these were really easy, cutting up the squash was the most difficult part, but the video I linked to in this post makes that part pretty simple too. I played around with thinner fries and wedges, I like mine crisp (hence some of the burnt parts you see in the picture) so I would recommend going the thin route. If you are more of a wedge type person, then of course go for the thicker cut!

You heard me right, I said Jalepeno Cornbread Whoopie Pies with Bacon Chive Goat Cheese Filling! As promised from my chili post I have the recipe for you guys and you have to give these a try. When Dennis emailed asking if he could bring these to chili club, my jaw dropped and I immediately started drooling. My only issue with him bringing them is that I would have to share them with everyone else. They were so good and definitely complemented the chili nicely. There is no need for me to go on, they speak for themselves. Make these, it would be a fun baking project for this weekend!

Garlic Mustard Braised Brussels Sprouts

Dijon Braised Brussels Sprouts

Last week my sister-in-law told me that brussels sprouts are the new asparagus. Lucky for me I tried brussels sprouts for the first time a couple of weeks ago and I had this post up my sleeve. When I saw this recipe on Smitten Kitchen I liked how it was different than the standard bacon or pancetta with brussels sprouts. Although, I guess since it was both mine and Mr. KMW's first time trying brussels sprouts I didn't really need to mix it up, but I'm glad I did. We're on the brussels sprouts bandwagon now, but we'll probably still eat a lot of asparagus.

I use the Trader Joe's Aoili Garlic Mustard that I used to dip my Steamed Artichokes and Tilapia with Garlic Mustard Cream Sauce. I've said it before, but that stuff is so good. If you don't have any Aoili Garlic Mustard you can use straight dijon and add a couple of cloves of minced garlic or a teaspoon of garlic powder.
