Sweet Potato Kale Bites

Sweet Potato & Kale Balls

Just try to get past that fancy nail polish of my new KMW hand model and check out these balls of sweet potato, kale & black beans!

If you're KMW follower you have probably realized that I love Sweet Potatoes. Definitely one of my favorite sides or vegetable to incorporate into a main dish...they're healthy and tasty!

When I saw these Sweet Potato Kale Bites up on Gina's Blog, I knew I wanted to give them a try. I'm still a newbie to this whole kale scene, but I love Sweet Potatoes & Black Beans so I figured I'd give these a go and I'm very happy I did. Definitely check out Gina's blog, I'm always impressed how she comes up with healthy recipes, that also seem very satisfying.

I brought these bites to the barbecue where I made this Serrano Spinach Macaroni & Cheese. They went over really well and were a great veggie option to bring.

Truffle Oil Tator Tots

When I was younger my brothers' nicknamed me 'Tater', claiming that I loved tater tots and that's why my cheeks were chubby. Not that I was against loving tater tots, but it just wasn't true...they weren't my thing. My cheeks weren't even that chubby either.

The truth was that they randomly saw the nickname on tv, tried calling me tater once, saw it got under my skin and therefore it stuck. That's what older brothers are supposed to do, right? Tease.

Times have changed. No my brothers have not stopped teasingme, but after eating these Truffle Oil Tater Tots, I may have rightfully earned the nickname. So tasty! When I was in LA for work we ate dinner at the O Hotel Restaurant and I solely ordered the burger so I could get these truffle tots on the side. Great decision. I mean truffle oil on any sort of potato is pretty awesome. 

So why not make them at home with some frozen tots? Don't ask questions, just do it!

I have a dish that will be a great addition to your 4th of July BBQ...or if you are just craving some comfort food. I went to a BBQ at my coworkers a couple of weekends ago and I got the request for some more spicy mac and cheese. I wanted to go with something a little more mild than the Habanero Mac & Cheese, but still had a kick and got inspired by this Serrano Creamed Spinach. That way Mr. KMW could eat it this time around!

Grilled Asparagus & Goat Cheese Polenta Cakes

I'M BACK!

Hopefully you guys didn't miss me too much and you were as entertained with Mr. KMW's post as I was. I had no idea that he had this up his sleeve, and when I happened to see it pop into my newsfeed I was happily surprised.

I was away on business last week, and spent my days at the LA Convention center in Video Game insanity at E3 (a video game conference).

After an exhausting week, I took the train out to the burbs where my brother and sister-in-law live and spent the weekend getting some fun in with my nephews. They're pretty awesome kids.

Potatoes & Onions - Nothing Fancy

Attention: This is "Mr. KMW".

My wife is away on business for the entire week so I am going to take this opportunity to eat whatever I want and blog about it. I am normally her test subject allowing her to experiment with all of her ideas for a good meal. It is so much fun to be her food judge and I absolutely love her process for keeping this blog up to date, but there is a downside.

  • She does not accept the concept of canned meat. 
  • She does not like to repeat meals, even the ones that are amazingly tasty. 
  • She does not like fried food.

 Guess what? This entire week, I am taking this oppotunity to eat the dishes she avoids!

Monday - Spam and rice.
Tuesday - Fried Chicken. 
Today, I decided to grill a fat t-bone steak with potatoes and onions. 
Tomorrow, more spam and rice! Ha.

I figure if my wife can blog about food, so can I. Here's a simple side dish I learned from my Mom and Dad. It's potatoes and onions cooked on the stove!
