In preparation for our move to Seattle and all of the fish that would be available, my parents gave me a Le Creuset Fish Gratin. Just like all things Le Crueset, I'm obsessed with this little cast iron pan.

It's perfect for a simple baked fish and can also be used on a grill, doesn't get easier than that. It makes for a fun presentation too...as long as you don't get creeped out by the tiny little teeth and glazed over eyeball. The only tough part is picking out the small bones....be careful!

I seasoned and stuffed my red snapper with thyme, oregano, herbes de provence, lemon slices, garlic, salt and pepper and the placed it over a bed of some veggies. You can season it with whatever you are hungry for, I think next time I'll add

Spicy Honey Soy Glazed Salmon

Spicy Honey Soy Glazed Salmon is a regular in our house, my husband is always requesting it and I love how quick and easy it is to make. I'm talking ridiculously easy, a perfect recipe after a long day of work. Serve it with a side of edamame you heat up from the freezer, making it a perfect weeknight dinner. With so little cooking, it gives you a lot more time for wine drinking and relaxing!

Plus salmon is good for you and it's all over the place here in Seattle. I'm going to have to add more recipes to my salmon rotation. I'm also going to have to figure out what to do with the 8 pound whole salmon I have in my freezer. I went to the market for vegetables and came home with that puppy, not sure how that happened. It will stay in the freezer until I get over the intimidation factor, whole fish that size wasn't something they sold at the A&P in Jersey City.

Here is the fish portion of our fish and chips dinner that I promised you earlier this week. When I saw these Crispy Baked Fish Nuggets that Laurie posted over at Simply Scratch I really wanted to give them a try. And no it's not because they brought me back to my childhood, I'm pretty sure fish sticks never touched my plate as a kid.

They just looked so simple, fresh and crisp and the recipe happened to involve some ingredients I was trying to use up before I moved...panko, mustard and hot sauce. Not to mention, it gave me an excuse to make french fries on the side!

Spicy Tequila Lime Shrimp Tacos

I've been going wild with Avocado this past week, thanks to my shipment from California Avocados Direct! So this will just be one of several upcoming posts that involves this delicious fruit. Yes avocado is actually a fruit despite many of us thinking it's a vegetable, I just had to use Google to make sure I got that correct. Shrimp was on sale so I decided to go with some simple and light shrimp tacos and give them a little kick with hot sauce. Shrimp is great for a weeknight dinner because it cooks up so quick and it's packed full of protein. These tacos were extremely easy to make and had great flavors.

Tilaipa with Mustard Cream

According to my recipe poll you guys want more seafood, and more quick and easy weeknight dinners. Lucky for you this Tilapia is both of those, I literally whipped it together for a last minute dinner in 20 minutes. I know it doesn't look pretty, but it tastes a heck of a lot better than it looks, trust me. It's so good! I used this delicious Aioli Garlic Mustard Sauce from Trader Joe's.

This mustard is so good and can be used in so many ways, I definitely recommend picking it up on your next Trader Joe's trip. If you don't have a Trader Joe's you could use regular dijon mustard in the recipe and I'm sure it would still be really tasty. I served it with couscous and the mustard sauce tasted really good on that as well. Keep reading for the recipe I adapted from Cooking Light.
