I mentioned in this post how Seattle is just CRAZY about Copper River Salmon and that this special fish gets the red carpet treatment when it arrives to the lower 48 at Sea Tac Airport. All I needed was one bite and I found out what all of this hype is about, it's that good.

You're probably wondering what I was...what makes this Salmon so special and tasty? Apparently, it takes a lot for Salmon to swim up the intense, 300 mile long Copper River, so the Salmon need to store extra fat and oils to make the long and strenuous trip. Their hard work pays off...not for them, but for us salmon eaters.

I picked my Copper River Salmon up at the store, along with some Creme Fraiche, then dirtied one pan while making it and a delicious dinner was on our table. Did I mention I only used 5 ingredients...and that includes

Smoked Salmon Salad with Brown Butter Vinaigrette

Now that I live in Seattle, I've become pretty tight with Smoked Salmon. Our relationship just started a couple of weeks ago, but it's off to a fantastic start. It's something easy to pick up at the market and keep in the freezer until it is needed. And if you're not into the freezer or refrigerator, the guy at the market told me it would last four days out of the fridge. I think I'll have to bring some with us the next time we go camping!

This salad is just the beginning, coming to KMW soon will be a tasty breakfast with Smoked Salmon and Smoked Salmon and Quinoa Patties. As I said, this is just the beginning of what I see to be a strong relationship...so I hope you're a fan!

Can we also talk about the Brown Butter Vinaigrette? If you haven't already heard, you can never, ever go wrong when it comes to Brown Butter. The dressing almost didn't make it onto the salad, because I was tempted to just drink it straight out of the pot I made it in.

Chipotle Shrimp, Pineapple & Feta Flatbread

As promised in my Chipotle Shrimp post, I threw some of that tasty shrimp onto some Lavash Flatbread with poblano pepper, pineapple and feta and let the magic happen. The unseasonably warm weather we were having in Seattle inspired me to buy some pineapple and get inspired with some summer flavors. 

Other than Mr. KMW peer pressuring me to keep adding more and more feta cheese (unnecessary since feta has such a strong flavor-I adjusted the recipe to account for that), this is light and healthy...on top of being a great combination of flavors. The spicy shrimp and peppers balance very nicely with the sweet pineapple and tangy feta. 

Oh and this Lavash Flatbread that I picked up at Trader Joe's...it's my new obsession, I'm warning you now. Lavash does dry out and become brittle quickly though, so I

Grilled Chipotle Shrimp

I don't think I shared some exciting news about our apartment in Seattle....we have a balcony, which means we have room for a grill! Where I still love my double burner grill pan and it will get a lot of use, I'm excited to have a real grill option.

We don't have a ton of space so we were looking for something smaller, but didn't want to opt for a camping or portable grill. We found this Char Broil Urban Grill, that's perfect for our space and we've been grilling up a storm!

Spicy Garlic Shrimp & Broccoli


I hope everyone had a nice weekend. It was absolutely beautiful here in Seattle and we took advantage of the weather with some wine tasting on Saturday and ventured out kayaking on Lake Union today. We've had a few nice weekends in a row, and I'm pretty sure this is not something we should get used to, but I'll take it for now!

Onto the food, that's why you're here after all. This Spicy Garlic Shrimp and Broccoli is a recipe you want to try, probably this week. There are not very many ingredients, the shrimp cooks so quick, and it's pretty darn tasty. I'm definitely adding this into my weeknight dinner rotation.
