This was a light, refreshing and easy fish dish that I will definitely be making again. It's a recipe from one of my favorite cookbooks, Dorie Greenspan's Around My French Table. She uses flounder and it's called Almond Flounder Meuniere, but I figured it was wrong of me to title a recipe that I couldn't even pronounce so I went with Almond Crusted Halibut.

Call me weird, but I don't even like Corona. What I can get behind is Corona Light as a light beer option, especially when it's served with this Spicy Shrimp Bowl. I won't put Corona Light on the ingredient list, but I recommend buying it to balance out the spice and to make you feel like you're on vacation on a random Wednesday night...even though you have to go to work in the morning. I know I write run on sentences, I was a better Math student.

I was in the mood for shrimp. Shrimp's a good go to weeknight dinner base, it cooks up quick and it's packed with protein. You can of course substitute ground beef or sliced chicken breast (just make sure time wise you cook them accordingly) if that's what you have on hand or shrimp is just not your thing.

Smoked Salmon Scramble

Happy Friday! I have a brunch recipe to get your weekend off to a good start!

We had a visitor in town for the weekend and I just HAD to serve him Salmon...I went with smoked. I didn't want to spend a lot of time cooking, so we could go out and explore for the day. This worked out perfect. Scramble up the eggs, toss in the smoked salmon and serve over some toasted sourdough bread. So easy and oh so good. And the lesson learned was that Smoked Salmon makes a great alternative to bacon.

As always, it will taste better if you serve it with a bloody mary!

Barbecue Salmon


I'm back with some more salmon. This time I combined it with one of my favorite types of food...BBQ. I'm partial to Kansas City Barbecue, but I came to appreciate Texas on our trip to Austin. So when Stubb's Barbecue Sauce was on sale at the store recently I loaded up and put it to use along with some Arthur Bryant's Rub.

I rubbed the Salmon with the Arthur Bryant's Rub, threw it on the grill, basted it with some barbecue sauce and a quick and easy dinner was served. Easy as that...three ingredient dinner. Just what I'm looking for after a long day of work.

Shrimp & Sausage Gnocchi with Asparagus

This picture doesn't give this recipe justice. It is a lot tastier than it is pretty, but hey weren't you always told not to judge a book by its cover?

It involves gnocchi, shrimp, asparagus, sausage and mascarpone cheese, so you shouldn't be surprised that it turned out absolutely delicious. In my book, it's really hard to go wrong when it comes to mascarpone cheese.

Another bonus, it was all cooked in one stove top pan...so easy clean up!

I'm not going to ramble on, just let you know that this is really darn tasty and you should make this for dinner.
