Apple, Cheddar, Red Onion, and Trader Joe's Hot & Sweet Mustard on Garlic Naan. Delicious. Should I just end the post there?

Maybe I should go on, and talk about the look of suspicion from Mr. KMW when he saw me putting apples on a panini. That suspicion was easily erased in the 3.5 seconds it took him to devour his panini.

It really was a delicious combo, the Hot & Sweet Mustard really helped

It's been 'hot' here in Seattle, luckily our hot doesn't compare to the rest of the country, we were hitting the high 80's. 

I love simple dinners like this BLT on hot summer nights. It's easy enough to cook up some bacon, but in our house we generally keep some cooked bacon in the freezer and then can just pop it in the microwave for about 10 seconds...making this a super easy dinner.

Tex Mex Sloppy Joes

As you can tell by the picture, these Sloppy Joe's are messy, but just grab yourself a napkin, they're supposed to be sloppy. They are totally worth the mess, they were extremely satisfying and also easy to make, perfect for a weeknight dinner.  I never liked sloppy joes as a child, and that can of Manwich always scared me as an adult, but thanks to this recipe Sloppy Joe's are now a part of my life. So give this homemade tex mex version a try.

Avocado Chicken Salad Sandwich

Avocado Chicken Salad

So that is a picture of what I've been eating for lunch all week. It's a chicken salad sandwich that involves avocado and chipotle mayo. If you know me you know I am a sucker for avocado and chipotle so I've been a pretty happy camper this week.  

Avocados add a nice creamy texture so you can add less mayo, which means it's a healthier option than chicken salads that are normally loaded with mayo. I was a little hesitant that Mr. KMW would boycott this sandwich since he LOVES mayo, I honestly wouldn't be surprised if I caught him eating it out of a jar with a spoon like ice cream, but he is a huge fan of this lightened up version.

Another great thing about this chicken salad is that I used a rotisserie chicken so it's super easy to make. Are you sold yet? You should be. Here's the recipe. As always, taste as you go and adjust ingredients accordingly.

Slow Cooker Pulled Buffalo Chicken Sandwiches

 

I have another Gameday recipe for you, and you should make it immediately. My husband is a buffalo wing connoisseur and these recieved his stamp of approval. My initial plan was to make these into sliders, but after not being able to find slider buns at 2 different stores I gave up since this would easily work with sandwiches. Where do you buy slider buns anyway?

Since these are made in the slow cooker they are so easy to make,  just throw a few ingredients in the slow cooker and have a finished product 8 hours later. One word of advice I have is do not make these when you'll be home all day. I work from home on Friday's and it was torture smelling the buffalo chicken all day long and having to wait until dinner to gobble it up.

I tried not to make them too spicy since my husband can't handle the heat like I can, he's more of a mild wings type of guy. These still came out spicy, just not too spicy, but please adjust the sauce ingredients to fit your tastes. The blue cheese dip to spread on the sandwiches helped balance out the spice nicely. Since I wanted to mix both light and dark meat this recipe makes way too much chicken for just the two of us, but it would be good for a crowd and I'm excited to find uses for it in other dishes.
