If quick, easy and flavorful is your thing, then you have to make these Cajun Chicken Sandwiches. They took less than 30 minutes to throw together from start to finish...and possibly to being in your bellies. That makes them the perfect weeknight dinner at our house. And as always, they make tasty leftovers which we're always looking for. The key to these sandwiches is using a tasty Cajun seasoning, I use Louisiana Cajun Seasoning and it does not disappoint.

Hold onto your seats..I'm back! Well, I really didn't go anywhere, I got really busy at work, got into some house projects, spent a lot of time cheering the Seahawks to a Super Bowl Championship and was less motivated to take pictures of our food when I couldn't get that natural light of day. I was spoiled by having sun until 10pm in the summer.
To all of my friends and family who have asked if I quit blogging...nope, I haven't. We'll just call this a sabbatical. One that was apparently a little too long, because I had to call in my IT department...aka Mr. KMW...to remind me how to post my photos to the blog. Oops!
I'm coming back with a slow cooker recipe as I know you all enjoy them as much as I do. These Slow Cooker Chipotle Chicken Tacos were a reader favorite while I was on my hiatus, and you all are just going to love this pulled pork. My friends devoured these while stressfully enjoying a Seahawks playoff victory over the 49ers!
When it comes to the Pat's vs. Geno's debate, I'm on Team Pat all the way...whiz with onions. When I'm 2,800 miles away from Philadelphia, I'm on team Kiss My Whisk. Thanks to Cooks Illustrated, I've found a darn good make at home option. All it's missing is the whiz, but I can definitely solve that next time!
I am hanging onto Summer with this one. The peaches have just been so darn good and I just can't seem to get enough of them. Although, maybe I'm just a sucker for fresh, juicy fruit...because I was singing the same song with Strawberries this year.
Then pressed between bread with salty pancetta and creamy brie...well, we have a winner here folks!
Once the peaches run dry, I'll happily transition to fall with my Apple, Cheddar and Red Onion Panini. I'm starting to think I'll like anything that involves fruit on bread with cheese.

Apple, Cheddar, Red Onion, and Trader Joe's Hot & Sweet Mustard on Garlic Naan. Delicious. Should I just end the post there?
Maybe I should go on, and talk about the look of suspicion from Mr. KMW when he saw me putting apples on a panini. That suspicion was easily erased in the 3.5 seconds it took him to devour his panini.
It really was a delicious combo, the Hot & Sweet Mustard really helped
