The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.

This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.

Egg, Prosciutto & Tomato Muffins
Sriracha Meatballs

I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.

Cheesy Dorito Crunch Taco Salad

Cheesy Dorito Crunch Taco Salad

My coworkers get all of the credit for the inspiration of the Dorito crunch in this chicken salad. I'm now a couple of months into my new job, and I've never heard a group of people talk about the Taco Bell Dorito Taco so much, honestly...I'd never even heard of it before. It sounds like an excellent idea, but the consensus around my office is that it's definitely not worth driving 900 miles to eat this taco.

So I took this cheesy Dorito crunch inspiration and combined it with the Southwest Chicken Salad from Lauren's Latest (I told you I had my eye on that salad) and let the magic happen. Hey, when I

Smoked Salmon Salad with Brown Butter Vinaigrette

Smoked Salmon Salad with Brown Butter Vinaigrette

Now that I live in Seattle, I've become pretty tight with Smoked Salmon. Our relationship just started a couple of weeks ago, but it's off to a fantastic start. It's something easy to pick up at the market and keep in the freezer until it is needed. And if you're not into the freezer or refrigerator, the guy at the market told me it would last four days out of the fridge. I think I'll have to bring some with us the next time we go camping!

This salad is just the beginning, coming to KMW soon will be a tasty breakfast with Smoked Salmon and Smoked Salmon and Quinoa Patties. As I said, this is just the beginning of what I see to be a strong relationship...so I hope you're a fan!

Can we also talk about the Brown Butter Vinaigrette? If you haven't already heard, you can never, ever go wrong when it comes to Brown Butter. The dressing almost didn't make it onto the salad, because I was tempted to just drink it straight out of the pot I made it in.

Oxtail Bourguinonne

I know I've talked to you all about Amanda before, whether it was a recipe recommendation, chili club, a beer recommendation, helping me drink beer or riding out Hurricane Irene. Well I hope you're not sick of hearing about her, because she made an amazing dinner for us last week.

Amanda's my best friend, we were roommates in college, roommates after college, and then we got married (not to each other, but to our lucky husbands) and ended up living in the same apartment building in Jersey City. Now that I'm moving, all I have to say is thank goodness for Face Time, so we can still drink wine 'together' while she helps me pick out which dress or shoes I should wear, all while living on opposite coasts.

Amanda wanted to make us a nice dinner before we head to Seattle in a couple of weeks, and she out did herself. I'm not exaggerating, the thought of the tender oxtail falling off the bone and the caramelized shallot mashed potatoes still makes my mouth water. And the wine was flowing!

Let's start with the first course, a Spicy Green Salad with Manchego and Pears. Just look at how pretty it is!

Can you really ever go wrong with manchego?

Festive Fall Salad with Sherry Vinaigrette

Apple Pear Salad

I was a late comer when it came to enjoying fruit in my salad, but a few years ago I converted and haven't looked back. I especially like the taste of sweet fruit contrasted with salty nuts and strong cheeses like blue or gorgonzola. I like how the apple and pear bring great color to this salad, brightening up your dinner table and making it a great fit for your Thanksgiving spread.

It's also quick to throw together as a side for your weeknight dinner or sometimes I'll throw in some grilled shrimp to make a very satisfying meal out of this salad. The recipe is below and I made Thomas Keller's Sherry Vinaigrette for the dressing. If you aren't up to making your own dressing you can always thow on a little olive and vinegar or balsamic vinaigrette.

Grilled Balsamic Chicken Salad with Blue Cheese

It was HOT here a couple of weeks ago, and I felt that was a good excuse not to go to the grocery store for awhile. So this salad is what I threw together with some chicken I had in the freezer, the cheese I had on hand (I always have cheese on hand) and the veggies I picked up at the farmer's market outside of my building. Some heirloom cherry tomatoes and sweet jersey corn were the highlights at the farmers market. I was excited because I recently learned that you don't even have to cook the corn, you can just cut it off the cob and throw it in the salad raw. I made a balsamic dijon for the salad dressing and the end result was a refreshing dinner on a hot summer night.  Before I share the recipe, I'd like to tell you that I can never spell balsamic right on my first try. Keep reading for the recipe.
