Broccoli, Pomegranate, Feta Salad

If you're like me and are still deciding on your Christmas menu, then consider this salad. I always try to make a healthy green side to go with the stuffing, mashed potatoes and creamed corn sides that I love. Don't be afraid to use it after Christmas either, it goes well with burgers, and I imagine a lot of other things too!

This is a recipe I received from my sister-in-law several years ago, the original recipe calls for dried currants but I went with pomegranate seeds and made a few other changes along the way.

Sweet Potato, Onion & Avocado Quinoa Salad

I may have mentioned this before, but quinoa salads are a go to for me recently. Whether it's a hearty salad for dinner or serving one as a side dish, and they make perfect leftovers to bring for lunch.  It's a great way to load up on veggies.

Another bonus, quinoa salads are quick and easy to throw together. The quinoa takes about 20 minutes to cook up and while it's cooking you can chop and cook up the veggies or meat you want to throw into the salad.

Pear, Bacon & Gorgonzola Salad

If you were wondering how the dinner conversations usually go at our house, they usually go a little something like this.

"Mmm, this is really good, what are you calling the recipe?" - Mr. KMW

"Pear, Bacon & Gorgonzola Salad" - Me

"I think you should call it Bacon, Pear & Gorgonzola Salad" - Mr. KMW

"But there's more Pear than Bacon in the salad" - Me

"But I like Bacon more than Pear" - Mr. KMW

A similar conversation probably happened about whether butternut squash should come before pear in this soup, and whether this should be called a chili or stew...really, I could go on. I won't though, you get it...deep conversations going on at our house.

Shrimp & Black Bean Taco Bowl

Call me weird, but I don't even like Corona. What I can get behind is Corona Light as a light beer option, especially when it's served with this Spicy Shrimp Bowl. I won't put Corona Light on the ingredient list, but I recommend buying it to balance out the spice and to make you feel like you're on vacation on a random Wednesday night...even though you have to go to work in the morning. I know I write run on sentences, I was a better Math student.

I was in the mood for shrimp. Shrimp's a good go to weeknight dinner base, it cooks up quick and it's packed with protein. You can of course substitute ground beef or sliced chicken breast (just make sure time wise you cook them accordingly) if that's what you have on hand or shrimp is just not your thing.

My coworkers get all of the credit for the inspiration of the Dorito crunch in this chicken salad. I'm now a couple of months into my new job, and I've never heard a group of people talk about the Taco Bell Dorito Taco so much, honestly...I'd never even heard of it before.
