Mustard Pork Chops

You guys! These are so easy, so quick and so delicious! They are going to be a definite staple in my weeknight cooking rotation. We just had them last night, and I had to share the recipe with you all, I felt it was too selfish not to. It literally took 15 minutes to make.

I felt I was so put together last night, came home from work, worked out, fed Baby KMW, was making dinner with some wine in hand and was ready to pat myself in the back when I realized I absolutely forgot to put a vegetable on the table...FAIL! I gave myself the excuse that I was supposed to travel to Boston this week for work (which didn't happen because of the snowstorm Juno), and I know Mr. KMW is not eating fresh veggies when I'm out of town. I'm pretty sure his thought is, who needs fresh veggies when you can eat Spam? Then I thought maybe I should pat myself on the back, I was supposed to travel for work, grocery shopped accordingly and we were not eating Spam for dinner!

Anyway, I made very few changes to the recipe, but did take a couple of short cuts. Also, next time I'm making this with bone in pork chops. So the cooking time will be a little longer, but the juiciness of bone in...totally worth it.

Hold onto your seats..I'm back! Well, I really didn't go anywhere, I got really busy at work, got into some house projects, spent a lot of time cheering the Seahawks to a Super Bowl Championship and was less motivated to take pictures of our food when I couldn't get that natural light of day. I was spoiled by having sun until 10pm in the summer.

To all of my friends and family who have asked if I quit blogging...nope, I haven't. We'll just call this a sabbatical. One that was apparently a little too long, because I had to call in my IT department...aka Mr. KMW...to remind me how to post my photos to the blog. Oops!

I'm coming back with a slow cooker recipe as I know you all enjoy them as much as I do. These Slow Cooker Chipotle Chicken Tacos were a reader favorite while I was on my hiatus, and you all are just going to love this pulled pork. My friends devoured these while stressfully enjoying a Seahawks playoff victory over the 49ers!

I'm on a roll with easy recipes for you all, with my 3 Ingredient Beer Bread, Strawberry Bruschetta and now this easy Slow Cooker Kalua Pork! 

This recipe was inspired by our recent trip to Hawaii and the red and black sea salts I picked up when I was there. The traditional method of cooking Kalua Pork is digging a pit, and cooking the pig underground with lava rock and banana leaves all day long. I skipped digging a pit in my backyard and let my slow cooker make the magic happen.

If you're looking for some comfort food, this Spicy Pork Ragu will hit the spot.

The meat cooks low and slow, it is filled with flavor and in the end there is a lot of food. This fed the two of us for 3 dinners and we were still able to stow some away in the freezer for a rainy day. And let me tell you, I CANNOT wait for the rainy day we pull some ragu out of the freezer.

If you have the time to be at home to cook the meat for several hours, this would be excellent for company. That is, if you like your friends, and want them to come back for dinner again, because after this meal....they will be back! Don't hesitate

Bret's Carnitas

My family is a little competitive...and by a little, I mean extremely. In case you don't remember, I have two older brothers, Aaron & Bret, and we know how to make anything a competition. It was always tough for them growing up, having their little sister be the most athletic one in the family :).
