Smoked Salmon & Ricotta Pizza

First, let me confess that I cheated and used Trader Joe's frozen naan bread as the pizza crust. 

Then, forgive me...I'm busy and I got home from work and a run with no dinner plans in mind. Then naan pizza, smoked salmon and ricotta happened. 

Lastly, thank me for adding ricotta this recipe. Wasn't sure how the whole tomato sauce, salmon and ricotta combo would turn out...excellent! I love ricotta. A friend sent me a homemade recipe for ricotta and I even bought a cheese cloth. I hope to give that a try soon...I'll let you know how that goes.

Naan Pizza


I made two variations of naan pizza for dinner last night; one meatball and spinach (because I had some leftover meatballs begging to be eaten in the freezer) and one zucchini, tomato, and onion. Both were really tasty and it was tough deciding which one I wanted a second slice of, so I opted for both.

 

Naan pizzas are a great solution if you don't know what kind of pizza to make, the smaller size allows you to make several different kinds and it's quicker and easier than making pizza dough. If you can't find naan, use flatbread. Below are the ingredients and directions, but you can of course use any combination that inspires you.  I also refer to 'grilling', but I live an apartment so am forced to use a grill pan which doesn't give the taste that a real grill does.

Pizza Throwdown


My husband and I had a pizza throw-down; I won for taste and he won for presentation (I imagine you can guess whose was whose).  I used The Pioneer Woman's Caramelized Onion and Prosciutto pizza, the onions are caramelized in brown sugar so that combined with the salty prosciutto was a guaranteed victory.  My husband had his own creation; turkey sausage, onions, and mushrooms and it was pretty tasty, but no caramelized onion and prosciutto.
