Thanksgiving & French Silk Pie with Rum Whipped Cream

I hope everyone had a great Thanksgiving Weekend! We stayed here in Seattle, where I was very busy with work, but in between work we were having a great time enjoying the holiday with our friends. 

We are thankful to the hosts of our Thanksgiving feast,

that included a beautiful bird (and some goofy looking guys),

and an impressive dessert spread.

While we were in the holiday spirit, a crew of us headed to a Christmas Tree Farm to chop down some trees.

We successfully found 3 trees, that went from the farm to our living rooms.

Okay, okay, I'll move onto the pie soon. Just closing the holiday weekend up by saying, while we of course missed our family on the East Coast we are thankful to have such an awesome family of friends here in Seattle.  Now onto the pie!

I Love Cherry Pie

Christmas is just a few weeks away, which means it's time to start thinking about what desserts will be on our tables. It's also time to start figuring out how to get on Santa's nice list, if you're currently on the naughty side. I can help you with the dessert, but not with your naughty habits. So onto the Cherry Pie we go!

I guarantee you my mom will be making a Cherry Pie or two.  It's my favorite and hers too, which means it's gauranteed to be on our table. It didn't even stop her when we lived overseas and the canned cherries needed for the pie weren't available. We would just haul cans back in our suitcase everytime we visited the States. Or if any family or friends wanted to visit us, they dare not step off that plane without pitted red tart cherries. Not only is the pie tasty, but it's so pretty, I mean just look at that lattice crust! It's even pretty before it goes in the oven.

And even prettier when you take it out, but don't worry, not too pretty to eat!

Before we get to the recipe, let's all say hi to my mom!

She's not going to be happy with this, I'm pretty sure she specifically told me not to post any pictures of her on this blog. Sorry mom! I just had to show everyone the protective foil around the crust. See that protective foil? It keeps the edges of the crust from burning, just take it off 15 minutes before the pie is done baking.  Onto the recipe that comes from my mom's falling apart Betty Crocker cookbook, apparently the recipes are different in the new versions.

Black Bottom Pecan Pie

Thanksgiving is 18 days away! What's your favorite Thanksgiving pie or dessert? My favorites are pecan pie, cherry pie and pumpkin cheesecake.

To help you get ready for Thanksgiving I'm going to share with you a Black Bottom Pecan Pie recipe from my Aunt Dana. Remember when she spoiled me with two glorious pies on my birthday? Well not only did she make a chocolatey version of one of my favorites, but she also made some rum whipped cream to top it off with. You heard me right, I have pecan pie, chocolate and rum whipped cream all in one shot here for you guys. Keep in mind that you can make the pie a day ahead of time, but the rum whipped topping should be made the same day.

Snickers Ice Cream Pie

As promised in my Birthday Dinner post here is the Snickers Ice Cream Pie recipe, I couldn't make you wait too long for it!

I can't seem to be able to capture a good picture of birthday cakes, I struggled on this one and the Chocolate Birthday Cake. The taste definitely makes up for the photography though, I promise. What's great about this Snickers Ice Cream Pie is that it's versatile, you can substitute any type of candy bar for the Snickers. With Halloween right around the corner, it would be a great way to use up some candy you steal from your kids. 

I recommend making this ahead of time if possible, to leave enough time to freeze the two different layers of ice cream.
