If you guys haven't checked out How Sweet It Is you should, she always has amazing food popping up on her blog that I just have to try. When I saw her Butternut Squash Baked Penne I knew I had to try it very soon, lucky for me I had some pre cut butternut squash in my fridge. That's what I call fate.

I made a few changes, mixed up the spices, used a different type of pasta added some chicken and it was fantastic. To be honest I only added the chicken because I thawed it for lunch but never got around to actually making lunch.

This was so good! I already want to make it again, even though we just finished up the leftovers.

'Quick' Sausage and Mushroom Lasagna

A week or so ago my husband not so subtly requested I make some lasagna. Doesn't he have pretty handwriting?

Well he requested lasagna and stuffing, but I clearly wasn't making both for dinner and decided the stuffing could wait until I made it with my mom, because her stuffing is amazing. So lasagna it was, and I got around to making it this past weekend.


I found a Bon Appetit recipe for a 'quick' lasagna, but please keep in mind that no lasagna is really that quick, this recipe is just not as time consuming as a lot of other lasagna recipes. The main reasons are because because it doesn't require you to make your own sauce and it uses no boil lasagna noodles. I like the recipe because it's an overall good base and you can mix up the ingredients you use. You can make it vegetarian and just use mushrooms, spinach, squash and zucchini or you can mix up the meat and use prosciutto or turkey sausage. You can mix up the sauce and use pesto instead of a traditional red sauce and you can of course play with the cheeses. The list could go on, but the point is you can really cater this to fit your tastes. It's really good as is too though! My only issue was I didn't like sharing my bottle of wine with the lasagna, it did help add some really nice flavor to the sausage and mushrooms though. This Sausage and Mushroom Lasagna Recipe is one I will definitely be using again, both as is and with some variety. Keep reading for the recipe with a couple of slight variations that I made this time around.

I'm Addicted to this Spicy Pasta Salad!


I was going to include this as part of my vacation wrap up post, but this is too darn good, it deserves it's own post. As soon as I saw this Spicy Pasta Salad with Smoked Gouda, Tomatoes, & Basil posted on The Pioneer Woman's blog I knew I had to make it, and I finally found the time at the lake. It was so good I made it twice within a week. After we got home from the lake we went to Monmouth Park Race Track (horses for those of you who aren't from Jersey) with some friends so I made it again. I enjoyed sneaking in bites of gouda while I was making it, sneaking in bites of the finished product before serving it, and both groups really enjoyed the pasta salad. The only downside was I had to share it with other people.

The first time I made this I used Spinach leaves because at the last minute I realized I didn't have basil leaves, it was a good substitute but the version with basil was definitely the perfect combination.  I also add extra chipotle, because I love chipotle and can't get enough of it in my life. 

Please go to the store and get the ingredients you need and make this now. Words can't describe how much I enjoyed it, I'll be making it again soon, I'm addicted.

Pasta with Pancetta and Leeks

After a long day at work and a long workout I was looking for a meal I could throw together in 15-20 minutes tonight. Luckily, I remembered the Pioneer Woman's Pasta with Pancetta and Leeks recipe that I have been meaning to try. I mean Ree said her readers owe it to her to make this recipe, so really it was the least I could do.  I followed the recipe almost exactly, that's right I used all of the butter and all of the cream this time, and it was so worth it. The plan was to have some leftover for our lunches tomorrow, but we couldn't resist eating too much tonight and we're going to have to make alternative plans for lunch. Next time I make this (and there definitely will be a next time) I might add some broccoli or mushrooms to get some extra veggies in. You should make this sometime soon.


Linguine with Clams

To top off my week of cooking seafood, I have some linguine with clams for you. I wanted to go light with the sauce and also use up some food in my pantry. Which resulted in this light and simple sauce that has a bit of a spicy kick (I would have added more red pepper, but my husband can't handle the spice like I can).  So add the crushed red pepper according to your preferences. I also only had whole wheat linguine on hand so that is what I used, but normally for this meal I prefer regular pasta. Keep reading for the recipe.
