Guacamole Pasta

I've been a bit sporadic with my posts lately, we've been having fun (and eating well) with visitors from the East Coast.

A good friend was here last weekend, and my parents the past few days...they have been spoiling us with some delicious dinners out. Last Friday we haddinner at Ray's Boathouse, where we enjoyed some of the first Copper River Salmon that arrived in Seattle. Copper River Salmon is a big deal around here...it literally gets red carpet treatment when it gets off the plane from Alaska.

Stovetop Butternut Squash Macaroni and Cheese

I can't believe I've had this blog for a year and I haven't posted any macaroni and cheese recipes, because I absolutely love mac and cheese and I've definitely had my fair share this past year. I think the issue is that I start shoveling it into my mouth as soon as it is out of the oven, leaving no time for pictures.

This stovetop butternut squash mac and cheese was inspired by Lauren over at Lauren's Latest, I'm always eyeing her recipes. Currently I have my sights on her Southwest Chicken Chop Salad and Cinnamon Bun Popcorn. Yes, Cinnamon Bun Popcorn.

I haven't posted in almost a week, I hope you haven't missed me too much! I've been busy getting into some sort of schedule as I get situated with my new job, and we're moving into our new apartment on Tuesday! I'm excited to officially get settled in (and get my good knives back). 

I'll also let you know that this is my first official post of something I cooked in Seattle. You were expecting fish weren't you? We've been eating a lot of fish out and I have been keeping dinners fairly simple since the kitchen supplies are pretty minimal here in temporary housing.

So I went with pasta, we are from Jersey after all! This pasta was delicious, it's based on a recipe from Cooks Illustrated, which by the way is a fantastic cooking magazine. I really enjoy how it speaks about technique and the recipe testing they go through. Most of my cooking magazines I just bookmark a recipe and there's a small chance I go back to cook it. With Cooks Illustrated, regardless if I make the recipe I'm getting some great kitchen tips.

Sun Dried Tomato, Spinach & Brie Pasta

Brie, Spinach & Sun Dried Tomato Pasta

We arrived in Seattle yesterday, and are busy getting settled in temporary housing while also searching for an apartment to live in long term. We lucked out and had a beautiful day to walk around the city and checkout different areas today. A lot of cute areas, beautiful views and HILLS....my legs are sore!

Before we move on to what I start cooking up in Seattle I still have some posts from what I cooked up before we left Jersey City. A lot of them have to do with the emptying of the pantry I did before we moved. Hence the two different types of pasta you see in the photo above! I almost always keep pasta and sun dried tomatoes in my pantry, a bag of spinach in my fridge and some sort of cheese on hand. Roasted Red Pepper Pasta with Chicken & Artichokes



I'm throwing out a lot of quick and easy dinners for you guys lately, so hopefully you need them in your life as much as I do in mine.  You want to know what was also great about this one? It was even better leftover than it was the first time around, I love when that happens. To reheat it I did put a couple of more splashes of half and half in it before putting it in the microwave, which I highly recommend.

I'm just going to move onto the recipe, I'm winding down from a long weekend and need to plan my dinner menu of the week. I received a dozen avocados in the mail and I'm excited about all of the fun I'll be having with them this week!
