Butternut Squash, Black Bean & Spinach Burrito

Well I already told you yesterday in my Homemade Enchilada Sauce post that I made some delicious enchiladas for dinner last night. They were so good and packed full of healthiness on the inside with the butternut squash, black beans, and spinach. I recommend you make these very soon! If you're not in the mood for enchiladas the filling is really good on it's own too. Although I have no clue why you wouldn't be in the mood for enchiladas.

I usually cheat and buy the pre cubed butternut squash, but this time I didn't. Don't worry it wasn't because I was being overly ambitious, it was still out of laziness. I could either go downstairs and get a butternut squash at the farmers market outside my building or I could go to the effort to get in the car and drive to the store. The point of this tangent is to share this helpful video with you on how to peel and cut butternut squash.  If cutting up the whole squash intimidates you, check it out. Tonight's dinner was Butternut Squash, Black Bean, and Spinach Enchiladas, but before I share that recipe with you I need to share my homemade enchilada sauce recipe. I know the canned enchilada sauce is tempting, but this is so darn easy I recommend you giving it a try next time you're making enchiladas. Which just might be later this week after you see tomorrow's post on the echiladas I had for dinner tonigh. Tilapia Tostada

Last weekend Amanda highly recommended a chicken tostada recipe she had tried. Initially I had all intentions of picking up a rotisserie chicken and making this recipe as is, but then I remembered I had some tilapia in the freezer and plans changed. Who was I kidding? When was the last time I left a recipe as is? I also didn't want to shred the lettuce, because I figured I would already have enough dirty dishes without using my food processer, so I left it out. I know, I could have purchased already shredded lettuce, but I made up my mind that I just didn't want lettuce on my tostada. Feel free to add some to yours, but I was pretty darn happy with the lettuce free end product. My husband ate his first tostada in approximately 20 seconds, I honestly don't think he tasted it, but he slowed down for the second one and really enjoyed it and even noticed a little spice. Chicken, Black Bean & Corn Burritos

We had a lot of leftover chicken from our Peruvian Roast Chicken and I had a handful of ideas of what to make with the leftovers; pizza, burritos, over polenta, tortilla soup, lasagna rolls, tostadas, the list could go on. As you already know by the name of this post and the photo I went with the burrito option and made some chicken, black bean, and corn burritos and they were oh so good! According to my husband, they were even better leftover in his lunch today.

I made some guacamole with the heirloom tomatoes I picked up at the farmers market to go with the burritos. Have I mentioned before how awful I am at making guacamole look appetizing? I'm not ashamed, I'll still show you the picture, because  no matter how it looks it always tastes good!

Grilled Steak & Shrimp Fajitas

I'm still posting about our vacation meals, trying to pretend I'm still there, and not back in the office. Eventually I'll catch up to reality, but for now I'm going to hold off. We had a fajita night while at the lake, where I made some shrimp and steak fajitas.

My mom made a massive amount of guacamole that was devoured pretty quickly. Those aren't my man hands, those are my husbands.
And I used some fresh corn off the cob to make this corn and tomato scramble recipe that I love.
The recipe for the fajitas is below and the guacamole recipe is the one I made in this post but was multiplied  by three.
