Are you in awe? I just put before you a giant bowl of white rice! Don't worry, while a vat of white rice would excite Mr. KMW, I wouldn't do that to you guys. This rice has some flavor! It was a perfect side to the carnitas I posted earlier this week, and would really work well with any Mexican dinner.

My family is a little competitive...and by a little, I mean extremely. In case you don't remember, I have two older brothers, Aaron & Bret, and we know how to make anything a competition. It was always tough for them growing up, having their little sister be the most athletic one in the family :). 

Needless to say, the last time my family got together, Aaron & Bret were debating who has more recipes on KMW, whose recipes are more popular, etc. I absolutely love it, it means every time I visit them I eat like a king. So what do you think? Are you on Team Aaron? Or Team Bret?

Cajun Salmon Tacos

Cajun Salmon Tacos

It was Taco Week at our house a couple of weeks ago, that translates to Taco Week on KMW this week. Whenever I use the slow cooker, that feeds us for about four nights so we had the Slow Cooker Chipotle Chicken Tacos I posted  on Monday for 4 nights and these Cajun Salmon Tacos the rest of the week. Pretty solid week if you ask me. My only regret was that queso wasn't involved.

The key to these Cajun Salmon Tacos was the seasoning. I went with this Louisiana Cajun Seasoning, it was recommended to me by my coworker from Louisiana, so it's legit. This seasoning really does add excelent flavor to fish, or chicken...or veggies, and probably even rice for that matter. Definitely check it out. I suppose other cajun seasoning would work, but just remember, it wasn't recommened by a local.

And then top the salmon off with some slaw. I used red cabbage for the slaw, because that's what arrived in my CSA, but I'm sure it could easily be swapped out for green cabbage. And you could always purchase cole slaw, that is if you don't fear the excessive amount of mayonnaise in the store bought kind like I do.

Slow Cooker Chipotle Chicken Tacos

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

I'm always looking for new slow cooker recipes and receive a lot of feedback from readers that you're also looking for more. So I took this Chipotle Chicken Recipe from Homesick Texan and threw it into my slow cooker. Once again, it was great to come home to a delicious dinner.

Making the chipotle sauce means that this recipe takes a little more leg work than just dumping ingredients into your slow cooker, but it's well worth the effort.
