Let's talk about easy weeknight dinners. I don't know about you, but I need more of them in my life and these BBQ Chicken Sweet Potato Boats are officialy in the rotation. What's your favorite easy weeknight dinner?

Bread with 'Stuff On It'

It's been forever! After traveling for Christmas and New Years, I spent a week in Vegas for work, then came back and was off for a long weekend in Whistler enjoying this.

I will definitely be following up with a Whistler travel post. It was a fun weekend of skiing, good company, après skiing, beautiful scenery and some good eats.

Now onto the Bread with 'Stuff On It.'

I know, I know. I ditch you for a couple weeks and I come back with this non-recipe recipe. It's actually a perfect post vacation, quick throw together lunch or dinner as you get back into the grind. Or an easy one to throw together after working late. Not to mention, Mr. KMW loved this.

My cousin mentioned this 'recipe' when she visited a few months ago and it's already made its way into our rotation.

So here it goes for a really loose recipe, mix it up, use what you have on hand and play with your favorite ingredients. Below is the base to what I used this time around, and the measurements are rough estimates, this isn't a measuring kind of meal.

Creamy Tomato Spaghetti Squash

I threw this together on a whim one night as I needed a side for grilled steak, and had a spaghetti squash sitting on my counter.

It turned out delicious and was addicting. I love it when that happens, when I just throw something together with ingredients I have on hand, and it results in a recipe that I will be repeating...over, and over. This could definitely work for a main dish too. You could either have it as a veggie main dish, or mix some grilled or roasted chicken in if you wanted some meat. 

Cooking the squash in the oven takes awhile, but it's hands off, and after the squash is cooked this recipe is super quick and easy. You could also always microwave it for a shortcut, like I did with this Spaghetti Squash with Scallops in Cream Sauce or my Baked Spaghetti Squash with Turkey Sausage

Roasted Tomato Basil Soup, French Onion Style

You guys are going to love me for this recipe, I'm still having dreams about it. I took a simple Tomato Basil Soup and melted cheese on top so it got on bubbly and browned, we all know that's the best part of French Onion Soup!

This was another inspiration of my new Blendtec. Blending up vegetable soups in the fall is one of my go to dinner options. Pear, Bacon & Gorgonzola Salad

If you were wondering how the dinner conversations usually go at our house, they usually go a little something like this.

"Mmm, this is really good, what are you calling the recipe?" - Mr. KMW

"Pear, Bacon & Gorgonzola Salad" - Me

"I think you should call it Bacon, Pear & Gorgonzola Salad" - Mr. KMW

"But there's more Pear than Bacon in the salad" - Me

"But I like Bacon more than Pear" - Mr. KMW

A similar conversation probably happened about whether butternut squash should come before pear in this soup, and whether this should be called a chili or stew...really, I could go on. I won't though, you get it...deep conversations going on at our house.
