Bret's BBQ Baby Back Ribs

Whenever we visit my brother and his wife in Virginia, two things are guaranteed, good meat and moonshine. So when we had a wings & ribs night on vacation, I knew my brother's ribs would not disappoint. The ribs were falling off the bone and you could taste the love he put into them; they were marinated overnight, braised in beer, and then smoked over wood chips. Below is a picture of them, post marination and pre-braising.

Grilled Steak & Shrimp Fajitas

I'm still posting about our vacation meals, trying to pretend I'm still there, and not back in the office. Eventually I'll catch up to reality, but for now I'm going to hold off. We had a fajita night while at the lake, where I made some shrimp and steak fajitas.

My mom made a massive amount of guacamole that was devoured pretty quickly. Those aren't my man hands, those are my husbands.
And I used some fresh corn off the cob to make this corn and tomato scramble recipe that I love.
The recipe for the fajitas is below and the guacamole recipe is the one I made in this post but was multiplied  by three.

Grilled Polenta Cakes

I made these grilled polenta cakes while on vacation, and for most of the group it was their first time trying polenta. Everyone seemed to enjoy it, hopefully they weren't just being nice and they really did! We had it along with some of my mom's famous brisket (I'll be posting that recipe at some point) and grilled asparagus. It was fun playing on a real grill all week as opposed to my grill pan indoors. These were really easy and I'll be making them, or another variation again soon, since I already bought a tube of polenta at the store today. Grilled Swordfish with Balsamic Brown Butter

This weekend we picked up some swordfish steaks at the seafood market. And since I can't seem to get enough of my grill pan these days, I decided to make grilled swordfish with balsamic brown butter sauce. I was inspired by this recipe on epicurious. I scaled it down to 4 servings, so my husband could have 2 servings for dinner and I could bring the extra for lunch tomorrow. I served the swordfish with a garlic and corn couscous, which I'll follow up with the recipe another day. We also felt very adventurous when we ventured from red wine to white tonight. I think this is the first bottle of white we've ever had with dinner, it was Cielo Pinot Grigio. Pinot Grigio seems to be the only white wine we can get into, and this is an inexpensive bottle that was crisp and fresh, perfect for the hot weather we had today. Grilled Fish Tacos

I used the Roasted Tomatillo Salsa recipe from yesterday on these Tilapia Fish Tacos, and they made the perfect pair. Tilapia is pretty widely available and reasonably priced, but can be substituted with any white fish (cod, haddock, catfish, mahi mahi, pollock, red snapper, sea bass). If you already made the Tomatillo Salsa, or just opted to buy some bottled at the store, these make a quick and easy weeknight meal.  This was just what I was looking for after a long day of work, followed by one of my last training workouts before the Philly Triathlon this weekend.
