Chili Garlic Mushrooms

I hope everyone enjoyed the long weekend! We were supposed to head over to Olympic National Park for some hiking and exploring of the Pacific Coast, but Mr. KMW was feeling under the weather so we called it off. We were pretty bummed, but I took advantage of the long weekend to get in some workouts, try out some new recipes and do A LOT of shopping. At the rate I was shopping...he started feeling better real quick.

I made these Garlic Chili Mushrooms in hopes that bringing some heat would help clear up Mr. KMW's head. Or at least help him sweat out his cold. I don't know if it did the job, but I do know it satisfied our tastes!

I had tested out this recipe a couple of weeks ago when my parents visited, but didn't get a picture...about 2 minutes off the grill and they were gobbled up. And since I loved them (I'm a sucker for this slimy veggie), I was eager to eat them again and also get a picture so I could share the recipe with you guys. They're super easy to throw on the grill, but you could also cook them in the oven like I did with these Garlic Roasted Mushrooms

These were a side for our Grilled Lamb Burgers, as soon as I saw the recipe for these over on Heather's blog I knew we'd be having them for dinner soon. It was hard, but I waited a whole day to make them.

Yes, that's Sweet Onion and Chili Ketchup dripping out of it and smothered on the bottom of that bun is a Feta Cheese spread. Make these burgers and take the extra steps to make both the ketchup and the spread.

Buffalo Chicken Burgers

Buffalo Chicken Burgers

 

We LOVE all things buffalo in our house, and these buffalo chicken burgers surpassed all of our expectations. And no, it wasn't because we have low expectations. 

This is why...

Buffalo sauce was mixed into the chicken patties and then more was slathered on while grilling.  

Blue cheese crumbles were mixed into the patties, just look at it oozing out below.

and, I added shredded carrots into the patties, so that means I could tell myself they were healthy :)

The burgers were then topped with avocado and immediately devoured. These were seriously so good, if you are a fan of buffalo sauce or my Pulled Buffalo Chicken Sandwiches these are a must try!

Portabella Mushroom Pizza

This post is going to be short and sweet. I'm exhausted from a day of eating. We went to the Food Truck Rodeo in Fremont, where we feasted on Short Rib Tacos, Pork Belly Hum Bao, Jamaican Patties, Pizza, Pulled Pork, Lumpia, Caramel and Vanilla donuts, Ice Cream, etc. Oh and we bought the tickets where you can get in early to beat the crowd, all of this started at 10 am, let's just say it was one heck of a breakfast!

I love mushrooms and I love pizza. Granted, this recipe is pretty different than actual pizza, but it involves pizza sauce and fresh mozzarella so you really can't complain. It's healthier and it's also REALLY

Grilled Chipotle Shrimp

I don't think I shared some exciting news about our apartment in Seattle....we have a balcony, which means we have room for a grill! Where I still love my double burner grill pan and it will get a lot of use, I'm excited to have a real grill option.

We don't have a ton of space so we were looking for something smaller, but didn't want to opt for a camping or portable grill. We found this Char Broil Urban Grill, that's perfect for our space and we've been grilling up a storm! 

What's your favorite thing to grill?

As I continue on my shrimp kick, I have some Grilled Chipotle Shrimp for you. I'm such a sucker for chipotle flavor. The shrimp is great on its own, would be excellent for a crowd, thrown in a salad, on pizza, the list could go on. In addition to eating it straight up, I made a Chipotle Shrimp, Feta & Pineapple

Balsamic Four Onion and Portobello Mushroom Turkey Burgers

 

A couple of weekends ago, we were driving home from a friends wedding in Ithaca and we stopped at Caravia in Clarks Summit, PA. In addition to having once of the best chicken cutlet sandwiches I've ever had in my life, we picked up some delicious spreads, sauces, & jams. One thing I picked up was a jar of this Balsamic Four Onion spread and I decided to use it to make turkey burgers. When I told my husband I was making turkey burgers, you should have seen the skepticism on his face. What, burgers without beef? Let's just say he was pleasantly surprised and requested they become a part of our regular rotation. I have proof below, this is him devouring his second burger.
