Soy Balsamic Slow Cooker Chicken

The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.

Cedar Planked Salmon with Cayenne Lime Butter

This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.

Egg, Prosciutto & Tomato Muffins
Sriracha Meatballs

I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.

Greek Cucumber Bites

Cucumber Feta Bites

Cucumber Feta Bites make for a healthy, easy and tasty appetizer. Can't beat that, can you?!

I made them for the Super Bowl, but they would work well for the holidays or any gathering really, they make for great finger food. They're also an easy appetizer to bring to a party, because they don't have to be heated up.

I'm always looking for healthier appetizer options so when I saw Katie's Cucumber Feta Rolls over at Good Life Eats they definitely jumped out at me. I ended up making bites instead of rolls since they would be easier to slice up and I also wouldn't have to deal with toothpicks. You know me, I'm always looking for

Tex Mex Sloppy Joes

Tex Mex Sloppy Joe

As you can tell by the picture, these Sloppy Joe's are messy, but just grab yourself a napkin, they're supposed to be sloppy. They are totally worth the mess, they were extremely satisfying and also easy to make, perfect for a weeknight dinner.  I never liked sloppy joes as a child, and that can of Manwich always scared me as an adult, but thanks to this recipe Sloppy Joe's are now a part of my life. So give this homemade tex mex version a try.

Baked Butternut Squash Fries

Butternut Squash Fries

You already know I love butternut squash, well I also love french fries. Who doesn't? The attempt I made at a healthier alternative with these Butternut Squash Fries turned out great. That was our lunch Saturday, it's normal to eat fries for lunch right?

The best part was that these were really easy, cutting up the squash was the most difficult part, but the video I linked to in this post makes that part pretty simple too. I played around with thinner fries and wedges, I like mine crisp (hence some of the burnt parts you see in the picture) so I would recommend going the thin route. If you are more of a wedge type person, then of course go for the thicker cut!

They were delicious plain, but we also dipped them in

Super Bowl Recipe Round Up

I love football, and the food that goes along with watching it. So when we were sitting at lunch the other day and Holly was asking for recipe ideas for her Super Bowl party I was inspired to do this round up. I broke the recipes out into groups for you guys; General Goodness, Balls of Goodness (yes you read that correctly, I just said Balls of Goodness), Dips, Healthier Dips, Chilis and Healthier Options. Enjoy and Go Giants!

Slow Cooker Pulled BBQ Chicken

Slow Cooker BBQ Chicken

I know I keep telling you this, but I love my slow cooker! Especially when it involves easy recipes like this pulled BBQ Chicken, where there are minimal ingredients involved and I can just dump them in and have a tasty meal 6 hours later. I was also excited to use some Stubbs BBQ sauce that I picked up on our trip to Austin.

This recipe is very similar to the Pulled Buffalo Chicken, just without the buffalo flavor. I'm a huge BBQ fan though so I had no problem devouring this version. Both the Buffalo and BBQ versions of this recipe would be an easy dish to add to your Super Bowl spread. You can serve the chicken on sliders for an appetizer or on regular rolls to make it a main meal. Next time I plan on making a BBQ Chicken Pizza. And you can of course always serve it straight up, BBQ style.

If you are making this for a large crowd you might want to up the quantities a bit, depending on how many people. This made enough for about 8 sandwiches.

And if you haven't already,
