Salmon and Asparagus Orzo

Salmon & Asparagus Orzo 2

Spring is here, which means Asparagus is running rampant at the farmers market! And the salmon...we just eat a whole lot of that around here. Combine both of those with orzo and a light creamy sauce and we're in business!

The creamy sauce added the deliciousness that creamy sauce always does, but was also light enough to be refreshing for spring. In an effort to reduce carbs, I had a pretty high ratio of fish and veggies to pasta. 

Mr. KMW gave this a 10 out of 10 and is looking forward to this spring pasta being added to our dinner rotation!

To be honest with you guys, I am really busy so I'm going with a bookmark to blog post today.

What am I so busy with?

Filling out my March Madness brackets! As I've mentioned before (& here), I am a huge college basketball fan and this is my favorite time of year. I'm a die hard Kansas Jayhawks fan, and just because I'm now a Washington resident doesn't mean that I am on the Gonzaga bandwagon. I'm staying with my roots on this one.

Time to move onto the food, I'm sure you here to talk about that and not college basketball. I found this recipe over at MyRecipes and it was a hit in our apartment. It was easy to make, a nice presentation and had excellent flavors. Another recipe that would be prefect for guests. The only adaption I made was that I used Spanish Chorizo and sliced it up, instead of using ground Mexican Chorizo with casings removed.

Smoked Salmon Chowder

Smoked Salmon Chowder 2

As promised in my Fried Leek post, the recipe for the Smoked Salmon Chowder we had on Christmas Eve. The chowder alone made it a Christmas Eve to remember, and this may have to become our traditional Christmas Eve dinner. This was a super easy recipe, and it will definitely get made on other nights of the year. You know how we loved smoked salmon in our house, and this was absolutely delicious. I had to restrain Mr. KMW from helping himself to a fifth bowl.

It was a creamy base with tomato flavor, making it a New England type of chowder, with a touch of Manhattan. And I, of course, topped it with Fried Leeks, a great garnish for any soup.

Grab yourself some smoked salmon and make this chowder, you will have no regrets!

Penne Vodka with Salmon

Penne Vodka with Salmon

My Grandpa was visiting a couple of weeks ago and was able to score us salmon from family he has in the area. I mean we've had a lot of salmon since we've moved here, but I haven't been second degree away from the person who actually caught the fish....I was pumped!

This was right around the time Emily over at Culinary Style posted a recipe for Salmon Pasta with Vodka Cream Sauce that had me drooling. Not to mention, Penne Vodka is one of Mr. KMW's go to dishes when we go out for Italian, and we've been slacking with trying Italian restaurants here in Seattle. I've heard and read about some excellent Italian restaurants in Seattle restaurants, but I have a fear of disappointment after being spoiled with the amazing Italian food NYC and NJ has to offer. I have the same issue with bagels.

This was a light, refreshing and easy fish dish that I will definitely be making again. It's a recipe from one of my favorite cookbooks, Dorie Greenspan's Around My French Table. She uses flounder and it's called Almond Flounder Meuniere, but I figured it was wrong of me to title a recipe that I couldn't even pronounce so I went with Almond Crusted Halibut.
