S'mores Dip


This photo got a lot of love when I posted it on Instagram. I knew I couldn't be selfish and keep it to myself so here I am posting it for you all. 

Not only is it as delicious as it sounds and looks, but it is so darn easy! It literally takes about 10 to 15 minutes from start to finish. And probably took us even less time to devour (by probably I mean definitely). It's a perfect sized dessert for 2-4 people (although I could see myself justifying one) and could easily be scaled to a bigger size to feed a crowd. I can't think of an easier dessert for a party, and this would be an absolute hit.

This version is graham crackers dipped in straight up chocolate and marshmallows, but I also plan to try the following variations. Let me know what your ideas are!

March is here! You know what that means? Tis the season for College Basketball...Rock Chalk Jayhawk! This Buffalo Chicken Dip will be perfect for your March Madness party. 

Warning: This creamy, buffalo goodness is addicting and I'd recommend whipping out your stretchy pants for consumption. Also, send all leftovers home with guests, or you may find yourself snacking on it before dinner, after dinner and for breakfast.

Chef Keck brought this to our Super Bowl Party, and let's just say the popular seats were directly around this vat of dip. It is perfect for a crowd...delicious and easy to whip together.

Veggies and hummus is always a good option, but I wanted to get a little bit creative with the type of hummus. Hayley's pumpkin cupcakes inspired me to throw together a Gameday recipe that would also work for your Halloween parties this weekend. If you are trying to figure out something you can pull together quickly at the last minute this recipes is for you , it literally took me 5 minutes to make. This pumpkin hummus is not on the sweet side, it's definitely a savory appetizer or snack. Serve it with pita chips or veggies for dipping, or spread it on a sandwich.

1 15 oz can of pumpkin puree (not pumpkin pie filling)
2 tablespoons tahini
2 tablespoons lemon juice
2 cloves garlic
2 teaspoons olive oil
2 teaspoons cayenne pepper
1 teaspoon cumin
1 teaspoon salt
1 teaspoon ground cinnamon, plus more for serving
2-3 tablespoons parsley
pita chips, for dipping 

Combine pumpkin puree, tahihi, lemon juice,garlic, olive oil, cayenne pepper, cumin, salt, and cinnamon in a food proccesor and process until smooth. Add parsley and process until well combined. Sprinkle with cinnamon for serving and enjoy!

Well nothing like following up a Broccoli and Cheese Soup post with another vat of cheese, please don't judge me. This week's Gameday post is Chili con Queso and it reminds me of my childhood, physical restraint could not stop me from devouring this stuff. I'm not exaggerating, I'm pretty sure my brothers tried to physically restrain me, but we won't get into issues from my childhood. I guarantee you that this easy Chili con Queso will be a hit at any party. I'm sure many of you have heard of the standard block of Velveeta and Rotel mixed together which is the base, but I would like to encourage you to mix it up. Add some diced green chilles, ground turkey (chicken or beef for that matter), chorizo, sausage, diced jalepenos, or sauteed onions. It's so easy, whip some up some for a football game or the World Series this weekend!
