To be honest with you guys, I am really busy so I'm going with a bookmark to blog post today.

What am I so busy with?

Filling out my March Madness brackets! As I've mentioned before (& here), I am a huge college basketball fan and this is my favorite time of year. I'm a die hard Kansas Jayhawks fan, and just because I'm now a Washington resident doesn't mean that I am on the Gonzaga bandwagon. I'm staying with my roots on this one.

Time to move onto the food, I'm sure you here to talk about that and not college basketball. I found this recipe over at MyRecipes and it was a hit in our apartment. It was easy to make, a nice presentation and had excellent flavors. Another recipe that would be prefect for guests. The only adaption I made was that I used Spanish Chorizo and sliced it up, instead of using ground Mexican Chorizo with casings removed.

Pork Ragu

If you're looking for some comfort food, this Spicy Pork Ragu will hit the spot.

The meat cooks low and slow, it is filled with flavor and in the end there is a lot of food. This fed the two of us for 3 dinners and we were still able to stow some away in the freezer for a rainy day. And let me tell you, I CANNOT wait for the rainy day we pull some ragu out of the freezer.

If you have the time to be at home to cook the meat for several hours, this would be excellent for company. That is, if you like your friends, and want them to come back for dinner again, because after this meal....they will be back! Don't hesitate

All of you slow cooker fans are going to love this recipe.

It's one of those dump, set, and 6 hours later dinner is ready recipes! You really can't get easier than this and it's pretty minimal on the ingredients side. It's similar to Holly's Slow Cooker Mexican Chicken, which is a popular recipe around these parts...and by these parts I mean with KMW readers. 

I really don't have much more to say about this, just an easy and flavorful recipe that is perfect for the busy cook! The directions portion of the recipe is 2 sentences, enough said.

Filet with Serrano Peanut Sauce

I had to restrain Mr. KMW from drinking this Serrano Peanut sauce. Not physically, but with the death looks that I pull out that are oh so powerful. I definitely didn't blame him for loving it, but I wanted to save some for future dipping.

It was the perfect combo of sweetness from the peanut butter and heat from the Serrano, and all together an awesome dipping sauce. It would work great with chicken skewers, in a stir fry, on veggies, or just go ahead and drink it...just don't tell Mr. KMW I said that's okay though.

I've mentioned this before, but we are absolutely in love with our thermapen. I know, sounds ridiculous to spend that much on a thermometer, but it's worth it, we've been cooking meat perfectly thanks to that little gadget.
