Chorizo & Cornbread Taco Salad

 

One of our go to quick dinners is some form of taco salad or burrito bowls. There are enough meat, veggie and bean combinations, it adds enough variety for me...I get bored easily. They're quick to throw together, usually don't dirty too many dishes, can use staples you have on hand and are filling...making everyone happy! One of my go to Taco Seasonings when making the salads or the bowls is the Trader Joe's brand, it has a nice kick. This is the perfect I just got home from work at 7:30, am ravaged and my pregnancy bedtime is 9pm type of dinner. 

I had some leftover cornbread (I used this Skillet Cornbread from the Pioneer Woman) and was on a chorizo kick, which is how this not so pretty...but oh so delicious dinner came together. I mean, can you really go wrong with chorizo? I didn't use the Trader Joe's Taco Seasoning on this one because there were too many other flavors coming together.

Brussels Sprouts Orecchiete with Chorizo & Mushrooms

This pasta hit the spot. Mr. KMW declared it was one of his favorite pastas that I have ever made. Although, he seems to do that a lot when I make pasta...with the Spicy Pork Ragu, Penne Vodka with Salmon, Linguine with Clams, Butternut Squash Pasta Bake, Pasta with Pancetta with Leeks...really the list could go on.

The brussels sprouts, chorizo and mushrooms not only complemented each other in flavor, but the textures really blended well together. And having brussels sprouts just make a dish feel healthier in general...despite the amount of oil used.

I found this recipe over at Playin With My Food, I made a few minor changes and added chorizo, because I love it. This recipe was such a hit in our house, I'll definitely be keeping up with Playing With My Food to find recipe inspiration in the future.

Creamy Orzo with Chorizo and Corn

So there are weeks when I go to the grocery store approximately 152 times a week and times when I don't go for a couple of weeks. This meal was a result of not going to the store for over a week, and using up what I had on hand in the pantry and fridge.

I love these meals, especially when they result in a meal that I cannot stop shoveling into my mouth. If the ingredients look familiar, this was the same week I cleaned out my fridge with Chorizo Fried Rice, which was also pretty darn delicious. My weeks just turn out better when chorizo is incorporated into 75% of my meals.

Chorizo Fried Rice

I'll call this an 'I'm not going to the grocery store and I'm cleaning out the refrigerator and freezer meal.'

You can really take this recipe, and substitute the meat and veggies with what you prefer, or what you have on hand. I personally love chorizo, and I imagine you do too...if you have a pulse. The veggies were strictly what I had in my pantry, but the corn off the cob and green beans made it feel Summery, which was nice.

I also dumped in a lot of Sriracha, because I love it. See evidence of this here, here, here, here and here. I also believe if you don't like Sriracha that you may not have a pulse.

Cod with Red Pepper Chorizo Ragout

To be honest with you guys, I am really busy so I'm going with a bookmark to blog post today.

What am I so busy with?

Filling out my March Madness brackets! As I've mentioned before (& here), I am a huge college basketball fan and this is my favorite time of year. I'm a die hard Kansas Jayhawks fan, and just because I'm now a Washington resident doesn't mean that I am on the Gonzaga bandwagon. I'm staying with my roots on this one.

Time to move onto the food, I'm sure you here to talk about that and not college basketball. I found this recipe over at MyRecipes and it was a hit in our apartment. It was easy to make, a nice presentation and had excellent flavors. Another recipe that would be prefect for guests. The only adaption I made was that I used Spanish Chorizo and sliced it up, instead of using ground Mexican Chorizo with casings removed.
