Happy Friday! I have an easy brunch recipe for you to whip up this weekend.

My mom and dad gave me these mini cocottes for Christmas and I had to put them to use. Aren't they cute? Aren't I lucky that they opened up a Le Creuset outlet store right near my parents house? Anyway, onto the eggs. You can use these mini cocottes or a ramekin to make this easy breakfast. Also, play around with what little surprises you put under the eggs. I went with a boatload of Spinach and some cheese, but you can add bacon, tomatoes, black beans, mushrooms, caramelized onions, the list could go on. 

Below is the recipe for 1 baked egg, just increase the ingredients based on the number of people you are serving.

Flatbread Breakfast Pizza

Flatbread Breakfast Pizza

Pizza for breakfast? Yes, please! I'm not talking about cold leftover pizza from the night before, although that's pretty good too, but pizza using more typical breakfast ingredients. 

I threw this breakfast together with ingredients I had on hand so feel free to mix it up based on what you have in your fridge. Is it okay for me to admit I almost always have cooked bacon on hand? I can justify this, I promise. I've had some issues with fires and bacon so my husband is the official bacon chef in our apartment. Even though there is just two of us, he usually opts to cook the entire pack and then we just freeze the extra pieces. All you have to do to reheat the cooked bacon is pop it in the microwave for about 10 seconds, and there you go, I almost always have cooked bacon ready to use! Warning, it takes serious self restraint not to eat all of those cooked bacon pieces and actually freeze them.

So how about this weekend you wake up and make yourself a breakfast pizza and bloody mary?!

Sausage and Egg Casserole

I have an idea, you should make this Sausage and Egg Casserole for brunch this weekend!

This recipe is great for breakfast on the weekends and perfect on Christmas morning. There's nothing like devouring this and opening presents with your loved ones! It's a good thing I have the distraction of opening of presents, otherwise I might just eat the entire pan. This casserole makes for a nice breakfast when having company over because it's easy and you prep everything a day ahead. 

You know what's also nice? The Baileys that snuck into this picture, pour a little into your coffee, and there's definitely no need to wait until Christmas to do that.
