Soy Balsamic Slow Cooker Chicken

The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.

Cedar Planked Salmon with Cayenne Lime Butter

Cedar Planked Salmon with Cayenne Lime Butter

This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.

Slow Cooker Chipotle Chicken Tacos

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

Avocado Chicken Salad Sandwich

If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.

Egg, Prosciutto & Tomato Muffins
Sriracha Meatballs

I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.

Smoked Salmon, Sweet Potato & Asparagus Hash

Smoked Salmon, Sweet Potato & Asparagus Hash

I warned you that you would be seeing more smoked salmon around here. I also warned you about my soft boiled egg kick...and the hash, it might look familiar too.

This time I added a couple of my favorite veggies...sweet potatoes and asparagus. Asparagus has officially taken over the farmer's market. The result was this colorful and delicious hash...that I just had to

Onion Ring Eggs

Onion Ring Eggs

One of my favorite things about being a food blogger, is that all of my family and friends started sending me their favorite recipes or fun ones that they see elsewhere. This is a result of that, thank you Kristen! And you guys should thank her too, because now you have an awesome brunch option for this weekend.

If you are a fan of Egg in the Hole and onions, you're going to love this recipe! Donna and Anne over at Apron Strings cracked an egg in an onion! Really smart move on their part.

I made a quick attempt at breading the onion instead of straight up sauteing like they did. A sauteed onion would be tasty too, but I definitely liked the extra crunch the panko added. When you're reading the recipe directions, the quick breading may seem like a pain in the butt to do in the morning, but it's really not, I encourage you to take the extra steps to give some crunch to your brunch! I deserve to be made fun of for that line...go ahead.

Flat Sweet Potato Omelet

Flat Sweet Potato Omelet

Before we get into this post I'm hoping you can teach me how to spell omelette. Or is it omelet? I don't know. HELP!

Now it's time to get personal. It was late one night, Essential Pépin came on local tv and was showing all of the ways to make an omelet. The man is just amazing, his voice and demeanor are so soothing and his food makes me drool. He's amazing.

I guess we should move on from my crush of Jacques Pépin to this Flat Sweet Potato Omelet. On this special night I had with Jacques he made

Brussels Sprouts Hash with a Soft Boiled Egg

Brussel Spourts Hash & Soft Boiled Egg

The little green balls of death are back and as good as ever!

Shredded into a hash and with a soft boiled egg on top. I had never soft boiled an egg before and I can't wait to do it again. I found it a lot easier than poaching an egg and the yolk is still nice and runny.

Also, initially I wasn't planning on including the tomatoes, but when I went to the market I had a taste and they were so good I couldn't resist. I'm glad I picked them up as they definitely added a nice flavor to the dish. And did I mention I caramelized the shallots in brown sugar? Yes, I had some fun - bacon, caramelized shallots, little green balls of death and a soft boiled egg!

We had this

Avocado Toast with Tomato

Avocado Toast with Tomato

I love avocados, and based on all of the visits and love I have received on this Avocado Chicken Salad post, you guys do too. I'm really glad we could find that common ground, I really see us having a future together.

This is a simple recipe that works for a healthy breakfast, lunch, a snack or even a light dinner. You could also leave the cheese off to make it even healthier. I had some pepper jack cheese on hand though and couldn't resist! I'm a sucker for cheese, especially if it adds some spice.

Here's the recipe for 1 toast, but I'm warning you know, you will most likely want to make more than 1!
