You know we love our Butternut Squash around here. We usually go through one squash a week, and this time around I decided to make it for breakfast. If you're a butternut squash fan, KMW is the place for you.

I also put one of my latest favorite kitchen gadgets to use, the shredding disc on my food processor. I love that thing. Oh, I need to shred this block of cheese? 20 seconds and done. Shredded the heck out of some potatoes for this Bacon, Egg & Cheese Hash Brown Skillet. It can help you make coleslaw in no time at all. I'm a shredding machine lately, well I guess my food processor is more the shredding machine...you get it.

So get out your shredding attachment, shred up some butternut squash and make yourself some hash browns!

Bacon Egg & Cheese Hasbrown Skillet

Crispy hash browns, topped with bacon, eggs and cheese. Life doesn't get much better then this, it's a brunch recipe that will get your weekend off to a great start.

I'm a little behind over here...this was our Christmas Breakfast, but I will not be waiting an entire year to make it again. Mr. KMW suggested that this would be a good recipe for when we have visitors. In his mind, I'm sure he is thinking that we had about 10 out of town guests last year, and if that pace continues, he will be able to eat a lot of Bacon, Egg & Cheese Hash Brown Skillets this year.

My recipe feeds 2 to 3 people, but this is very scalable. Just increase the amount of ingredients you use and the size of pan and you should be good to go if you are hosting a crowd.

Maple Chicken Sausage & Mushroom Hash

You know what's really good? Al Fresco Apple Maple Chicken Sausage. It has just the right amount of maple syrup to make it a perfect sweet and savory breakfast.

I sliced some of this maple chicken sausage up and sauteed it with chopped mushrooms, tomato and onion. Stirred in a little cream cheese and placed an over easy egg on top. Result was another option to add to our brunch rotation...or lunch...or dinner. You know I love a hash for dinner...see my Smoked Salmon, Sweet Potato & Asparagus Hash or Brussels Sprouts Hash.

Scrambled Eggs & Smoked Salmon over Sourdough Toast

Smoked Salmon Scramble

Happy Friday! I have a brunch recipe to get your weekend off to a good start!

We had a visitor in town for the weekend and I just HAD to serve him Salmon...I went with smoked. I didn't want to spend a lot of time cooking, so we could go out and explore for the day. This worked out perfect. Scramble up the eggs, toss in the smoked salmon and serve over some toasted sourdough bread. So easy and oh so good. And the lesson learned was that Smoked Salmon makes a great alternative to bacon.

As always, it will taste better if you serve it with a bloody mary!
