So I know this isn't pretty, but if I can't be honest with you guys when I screw up, what kind of imaginary internet friends are you?

This is what happens when you squeeze in making a stromboli in between a bloody mary filled brunch and the Super Bowl. Despite the gaping hole it didn't disappoint! It's so good when it's fresh out of the oven and the cheese is oozing, you have to try this recipe out.

This is Dennis' ridiculously easy and tasty stromboli recipe, I've seen him serve it (without a hole) many times and it's always a crowd pleaser. Dennis usually stuck with just cheese and pepperoni, but I decided to throw in some spinach. I convinced myself that the nutritional value of the spinach would offset the cheese and pepperoni. I'm alive! Swimming in boxes, busy unpacking and enjoying my favorite time of year, March Madness. I can't get enough college basketball this time of year. Big Kansas fan here, Rock Chalk Jayhawk!

Once I get unpacked and get my kitchen in order, which requires a trip to The Container Store, I'll be back in action and posting more regularly. I'm still figuring out how to do my food shopping, so many options with Trader Joe's, Whole Foods, Safeway, Amazon Fresh and of course the farmer's markets.

Cucumber Feta Bites make for a healthy, easy and tasty appetizer. Can't beat that, can you?!

I made them for the Super Bowl, but they would work well for the holidays or any gathering really, they make for great finger food. They're also an easy appetizer to bring to a party, because they don't have to be heated up.

Avocado Toast with Tomato

I love avocados, and based on all of the visits and love I have received on this Avocado Chicken Salad post, you guys do too. I'm really glad we could find that common ground, I really see us having a future together.

This is a simple recipe that works for a healthy breakfast, lunch, a snack or even a light dinner. You could also leave the cheese off to make it even healthier. I had some pepper jack cheese on hand though and couldn't resist! I'm a sucker for cheese, especially if it adds some spice.

Here's the recipe for 1 toast, but I'm warning you know, you will most likely want to make more than 1!

Butternut Squash Fries

You already know I love butternut squash, well I also love french fries. Who doesn't? The attempt I made at a healthier alternative with these Butternut Squash Fries turned out great. That was our lunch Saturday, it's normal to eat fries for lunch right?

The best part was that these were really easy, cutting up the squash was the most difficult part, but the video I linked to in this post makes that part pretty simple too. I played around with thinner fries and wedges, I like mine crisp (hence some of the burnt parts you see in the picture) so I would recommend going the thin route. If you are more of a wedge type person, then of course go for the thicker cut!
