Creamy Mac & Cheese with Broccoli

You all have probably been wondering what I've been doing other than eating Brussels Sprouts and Strawberries. Well I've been busy showering, nope, I'm not talking about personal hygiene here, but we hosted a Jack and Jill Pig Roast Wedding Shower for our friends and then my friend threw me a 'Ready to Pop' themed baby shower. After a couple of food recipes for you all, I'll have posts on those, because they were pretty darn fun...and maybe I'll even have a baby in between.

And by the way, Strawberries may be out, Peaches and Rainier Cherries are hitting the spot these days. The Peaches coming from Central California right now are so juicy and sweet, I can't get enough. Needless to say, this Peach and Tomato Salad has been showing up at our dinner table a lot lately. 

Now on to the good stuff...mac and cheese! You all know I love my macaroni and cheese (see evidence here, here, here and here). So when I saw this easy, creamy stove top version over at Spoon, Fork, Bacon, I knew I had to try it. I mean an entire block of Brie and Camembert were involved! And then I made it a health food by adding broccoli. That counts, right? 

I would go on further, but Mr. KMW is holding off on scooping me up some ice cream until this post is finished. So I got to go get some ice cream...with peaches on top, of course!

Simple Pan Roasted Brussels Sprouts

We like our brussels sprouts toasty #eatyourveggies

It's totally bizarre, but I have been craving brussels sprouts recently. Don't get me wrong, I crave my share of sweets (hello salted caramel gelato), but sprouts...can't get enough of them these days. 

Super simple brussels sprouts too, olive oil or butter, salt, pepper and sometime a little parmesan. These are so easy, it's almost embarrassing to be posting this recipe. Sometimes I pan roast them, sometimes I oven roast them and sometimes I grill them. If you can't tell by the photo, we like our sprouts extra toasty! I wasn't even going to post a recipe...hence the instagram picture...but that instagram picture got a decent amount of likes, so I figured you all like this veggie too.

Confessions of a Pregnant Food Blogger

Week 31

I haven't posted much about my pregnancy on here, as I generally try to stick with food, but with less than 9 weeks left until the due date I thought I'd give you all an update. Below are some 'confessions' aka random thoughts, information and ramblings about my pregnancy so far.


I eat 2 pounds of strawberries a week when they're on sale, when they're not on sale I go into withdrawal.

My go to breakfast is an Egg and Cheese on an English Muffin.

The only food that has not been appealing to me is buffalo wings.


We refer to Baby KMW as Little 12, a Seattle Seahawks reference.

The gender of Little 12 will be a surprise to everyone but the ultrasound technician.


Our nursery is white, gray and blue, which makes people think its a boys nursery. I'm a girl and I wear plenty of blue.


My Mom drank a Mint Julep the night before I was born, so I think it only makes sense to try to induce labor with one as part of my 'birth plan.'


In our birthing class, one of the first questions asked was how do I like to slow down and relax. Is it bad that Mr. KMW and I were completely blank? 


It was 80 degrees in Seattle last week, and I was thoroughly confused why Mr. KMW thought he had a say on whether we kept the windows open at night.

Banana, Peach and Granola Smoothie

Banana, Peach & Granola Smoothie #breakfast

As someone who has never liked milk, I've been making a lot of smoothies to get myself some more calcium, and to add more fruit to my diet. This recipe is definitely a base, I am always mixing up the fruit I use, with both a combo of fresh fruit from the local market and frozen fruit that I pick up at Trader Joe's. I like using frozen fruit to help thicken up the smoothie. 

Not only did I enjoy this smoothie, but it was a hit with Mr. KMW...while he is not always down with smoothies for breakfast...he wasn't letting any last drop of this one go to waste.

Other smoothies I have been enjoying are my Peanut Butter Banana Smoothie, Green Monster Smoothie and Strawberry Green Tea Smoothie.

Bacon, Grape & Broccoli Pasta Salad

I hope you all had a nice weekend. We had an action packed weekend of fun and sunshine here in Seattle. While Mr. KMW did some yard work, I worked on a DIY project for the nursery...trust me, it was an easy one, I am probably the least crafty person you know....I'll blog about it once it's finished.

We then had an epic dinner of at the Crawfish House, getting messy, while eating pounds and pounds of seafood.

And then burned off all (well some) of that butter bowling. Although, Mr. KMW was a little nervous they were going to think I  was smuggling a ball out of the bowing alley.
