Simple Pan Roasted Brussels Sprouts

We like our brussels sprouts toasty #eatyourveggies

It's totally bizarre, but I have been craving brussels sprouts recently. Don't get me wrong, I crave my share of sweets (hello salted caramel gelato), but sprouts...can't get enough of them these days. 

Super simple brussels sprouts too, olive oil or butter, salt, pepper and sometime a little parmesan. These are so easy, it's almost embarrassing to be posting this recipe. Sometimes I pan roast them, sometimes I oven roast them and sometimes I grill them. If you can't tell by the photo, we like our sprouts extra toasty! I wasn't even going to post a recipe...hence the instagram picture...but that instagram picture got a decent amount of likes, so I figured you all like this veggie too.

The recipe is very loose, as I  mention I often use different methods of cooking, but I'm going with the pan roasted today, but you can easily oven roast or grill these. I also eyeball the oil/butter, salt and pepper. So play around and season to your taste.

1 pound of brussels sprouts, trimmed and halved
2 tablespoons of olive oil or butter
grated parmesan (optional, but delicious)

If using parmesan, preheat oven to 450 degrees.

Heat oil in stove top pan over medium high to high heat. Once oil is heated, add brussels sprouts to pan and season generously with salt and pepper. Cover with lid and cook for approximately 15-18 minutes (until they are tender when you poke them with a fork), stirring around occasionally. If getting too browned for your liking, decrease the heat to medium.

If using parmesan, lightly sprinkle on top and place in oven for about 3-5 minutes.
