Bacon, Grape & Broccoli Pasta Salad

I hope you all had a nice weekend. We had an action packed weekend of fun and sunshine here in Seattle. While Mr. KMW did some yard work, I worked on a DIY project for the nursery...trust me, it was an easy one, I am probably the least crafty person you know....I'll blog about it once it's finished.

We then had an epic dinner of at the Crawfish House, getting messy, while eating pounds and pounds of seafood.

And then burned off all (well some) of that butter bowling. Although, Mr. KMW was a little nervous they were going to think I  was smuggling a ball out of the bowing alley.




And then we rounded out Sunday at the Mariners game, which they actually won!




The come from behind win was pretty exciting, but my favorite part may have been the garlic fries.

Oh, you were wondering when I was going to get to the recipe? Well I made another giant bowl of pasta salad.


Bacon, Grape and Broccoli Pasta Salad

This time Bacon, Grapes and Broccoli were involved. My favorite part of these giant pasta salads are having them for lunch all week. Or maybe my favorite part was the bacon. Seriously, the bacon and grape flavors went together so well. My only regret with this one was not chopping up the the broccoli into smaller bites. 

See below for the recipe inspired by this Broccoli, Grape and Pasta Salad from MyRecipes. 

1 package of rotini (farfalle, pasta or shells can be substituted)
1 package of bacon, cooked and broken into pieces (if you can get thick cut, go for it)
1-1/2 to 2 cups pecans, chopped
1-1/2 pounds broccoli, chopped into bite size pieces
1 to 1-1/2 lb seedless red grapes
1/2 red onion, sliced and roughly chopped
For the Dressing:
1-3/4 cups mayonnaise
1/4 cup sugar
2/3 cup balsamic vinegar
1-1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon dijon mustard

Cook pasta according to package directions.

Toast chopped pecans in stove top pan over medium heat, tossing regularly, about 5-8 minutes (keep an eye on them so they don't burn).

Whisk together dressing ingredients - mayonnaise, sugar, balsamic, salt, pepper, dijon mustard and set aside.

Toss together pasta, pecans, bacon, broccoli, grapes and red onion. Toss with dressing. Taste to see if any adjustments need to be made to dressing (more mayo, vinegar, seasoning, etc.).
