Cajun Chicken Sandwiches

Cajun Chicken Sandwiches

If quick, easy and flavorful is your thing, then you have to make these Cajun Chicken Sandwiches. They took less than 30 minutes to throw together from start to finish...and possibly to being in your bellies. That makes them the perfect weeknight dinner at our house. And as always, they make tasty leftovers which we're always looking for. The key to these sandwiches is using a tasty Cajun seasoning, I use Louisiana Cajun Seasoning and it does not disappoint.

And while I haven't been blogging as much (lets blame it on sleeping and nesting), I have been cooking and have made a commitment to myself to catch up on some of our favorite recipes lately in the next month. So that means you have the following coming your way, just try to contain your excitement!

But for today, we'll focus on these Cajun Chicken Sandwiches and how to get them into your belly. Let's go!

1-1.5lbs thin cut boneless chicken breasts (or use regular breasts, cut them in half lengthwise and pound them even)
Cajun seasoning
1-1/2 tablespoons butter 
1/2 onion, sliced thinly
1/3 cup white wine
1 small tomato, sliced
pieces of romaine lettuce, washed and dried
hoagie rolls
1-1/2 cups mayonnaise
1 tablespoon Tabasco sauce
1/2 teaspoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper 

Place large sauté pan over medium high heat, and melt butter in pan.

Preheat oven to 400 degrees.

Season both sides of chicken generously (I completely coated those suckers) with Cajun seasoning.

Once butter is melted and saute pan is hot, place chicken in pan and cook for about 5-8 minutes on each side or until they are cooked through to 165 degrees. 

While chicken is cooking, whisk together mayonnaise, Tabasco, lemon juice, garlic powder, salt in a small bowl and pepper and set aside.

Remove chicken from pan, and set aside. Reduce heat of pan to medium and add onion and wine, scraping up the brown parts on the bottom of the pan. Cook onions for about 6 minutes. While onions are cooking, place buns in the pan for about 5 minutes until they are warmed.

Assemble sandwiches with chicken, onions, tomatoes, lettuce and mayonnaise.
