Hold onto your seats..I'm back! Well, I really didn't go anywhere, I got really busy at work, got into some house projects, spent a lot of time cheering the Seahawks to a Super Bowl Championship and was less motivated to take pictures of our food when I couldn't get that natural light of day. I was spoiled by having sun until 10pm in the summer.
To all of my friends and family who have asked if I quit blogging...nope, I haven't. We'll just call this a sabbatical. One that was apparently a little too long, because I had to call in my IT department...aka Mr. KMW...to remind me how to post my photos to the blog. Oops!
I'm coming back with a slow cooker recipe as I know you all enjoy them as much as I do. These Slow Cooker Chipotle Chicken Tacos were a reader favorite while I was on my hiatus, and you all are just going to love this pulled pork. My friends devoured these while stressfully enjoying a Seahawks playoff victory over the 49ers!
In addition to sandwiches, I made these Sweet Potato Boats and some BBQ Taquitos with the pork. This recipe makes a boat load of meat, and from there you can take it anywhere. Enjoy!
The recipe below is adapted from Chow.
1 bone-in pork butt (4 to 5 lbs, with twine removed)
1 large yellow onion, sliced thinly
7 garlic cloves, minced
1 cup of beer (any kind will work)
2 tablespoons brown sugar
1 tablespoon chili powder
2 tablespoons kosher salt
1 teaspoon ground cumin
1 teaspooon cayenne pepper
1/2 teaspoon ground cinnamon
2- 3 cups of barbecue sauce
Optional if Making sandwiches: hamburger buns, coleslaw (I used this recipe)
Place onion and garlic in slow cooker. Pat pork dry and place on top.
Add beer, sugar, chili powder, salt, cumin, cayenne pepper and cinnamon. Stir around.
Cook in slow cooker for 8 hours on low. Remove pork from slow cooker and place on a plate and shred with two forks. Strain liquid mixture, reserving onions. Discard liquid. Place pork and onions back in slow cooker, add barbecue sauce and cook on low for 2 more hours.
Serve and enjoy!
