Grilled Short Ribs

Short Ribs

Grilled short ribs have been my go to dinner this summer. The first time I made them I grilled regular beef short ribs and thin cut short ribs. They both turned out pretty tasty, but since I'm always on a the go these days, I've been making the thin cut short ribs, over and over.

The marinade is easy, they grill up quickly and they get devoured by all. Perfect for entertaining...and trust me, I've definitely been making this for guests.

I usually serve it with a side of white rice, Chili Garlic Mushrooms, and a salad. Keeping the sides quick and simple is the key to making this an easy dinner for entertaining.

Below is the recipe, inspired by the Summer Short Ribs over at Dinner and A Love Story. I absolutely love that blog! Adjust the ribs and marinade for the number of people you are serving

Ingredients
3 lbs bone in short ribs or thin cut bone in short ribs
2/3 cup soy sauce
2 tablespoons brown sugar
1 tablespoon olive oil
1 teaspoon dark sesame oil
3 garlic cloves, minced
1 tablespoon hot sauce
juice from 1 lime
salt
pepper
1 bunch of scallions

Directions
Combine soy sauce, brown sugar, olive oil, sesame oil, garlic, hot sauce, lime juice, salt and pepper for marinade. Marinate short ribs. Marinate regular sized short ribs for 6 to 12 hours, and marinate thin cut short ribs for 2 to 8 hours.

Heat grill to high heat.

Brush scallions with olive oil, season with salt and pepper.

Place ribs and scallions on grill. Grill thin cut short ribs for 10 to 12 minutes, rotating a sides a few times. Brown all sides of regular sized short ribs, and cook for about 25 to 35 minutes or until cooked to your preferred doneness. Remove scallions when they are cooked.
