Peach & Tomato Salad with Goat Cheese

I know I said that my Strawberry & Avocado Salad with Salmon was Summer, but so is this one! Ripe peaches, tomatoes and corn off the cob...pretty much Summer if you ask me. I think I'll designate the Strawberry & Salmon salad as my main dish summer salad and this one as my side dish summer salad. Deal? Although technically you could throw some Salmon on this and it would make a darn good main dish salad too.

I initially made this salad for our housewarming party, but it was such a hit (and also something I could throw together in 10 minutes) that I made it for our block party that was the same week. And lets just say our new neighbors were giving compliments...glad I could get off on the right foot!

This will continue to be a salad I recreate this summer while the peaches and tomatoes are fresh!

Below is the recipe, I've been making it for larger groups so definitely adjust based on how many your serving. I've estimated the amount of olive oil and balsamic I use, but I really just open the jar and drizzle drazzle them over the salad as I feel appropriate.

6 to 8 cups of mixed greens
2 large tomatoes, roughly chopped
3 peaches, pitted and roughly chopped
2 cobs of corn, corn removed
1/2 red onion, chopped
6 oz crumbled goat cheese
1 cup toasted chopped hazelnuts
1/4 cup olive oil (approximate)
2 to 3 tablespoons balsamic vinegar

In a large bowl toss together mixed greens, tomatoes, peaches, corn, onion, goat cheese and chopped hazelnuts.

Dirzzle with olive oil and balsamic vinegar and toss again.

Serve and enjoy!
