Roasted Garlic and Sriracha Mac & Cheese

Roasted Garlic & Sriracha Mac & Cheese

I wanted to get you guys ready for your Fourth of July BBQ's with some Mac & Cheese. And apparently this Mac & Cheese to prep you for July 4th is becoming an annual event, last year I tee'd you up with Serrano Spinach Mac & Cheese.

I loved this roasted garlic and sriracha version, those are two things that are almost as dear to my heart as macaroni and cheese!

I hope everyone has a fun time celebrating 'Merica!

Ingredients
1 head of garlic
olive oil
4 tablespoons unsalted butter
2-3/4 cups of milk (I used 1%)
1/3 cup all purpose flour
1-1/2 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon nutmeg
1/2 teaspoon cayenne pepper
1/4 to 1/3 cup Sriracha, adjust according to spice preferences
2 cups havarti cheese, shredded
3-1/2 cups Beechers Flagship Cheese (can substitute sharp white cheddar), shredded
1 lb elbow macaroni
1 cup panko breadcrumbs
cooking spray 

Directions
Preheat oven to 400 degreees.

Cut off top part of garlic head, drizzle with olive oil. Loosely wrap in foil and cook for 40 minutes. Remove from oven, let cool until you can handle. Squeeze garlic clove sout of head into bowl, and mash into a paste. 

Reduce oven to 375 degrees.

Heat milk over medium heat in stove top pan.

Meanwhile in a large non stick saute pan (or high sided skillet) melt butter over medium heat. Once butter is melted whisk in flour. Whisk for about 1 minute.

Slowly whisk warm milk into butter/flour mixture. Add garlic paste, continue whisking until milk bubbles and starts to thicken, about 5 minutes.

Meanwhile, start boiling water for pasta (I use the same pan I warmed the milk in and just rinse it out) and cook 2 minutes below package directions.

After whisking milk and it thickens, remove pan from heat, stir in havarti cheese and 3 cups of Beecher's Cheese (save 1/2 cup for top) into milk until it melts. Stir in salt, black pepper, nutmeg, cayenne pepper and Sriracha.

Drain and rinse pasta and add into the pan with the cheese sauce. The pour into baking dish. Sprinkle with remaining 1/2 cup of Beecher's Cheese. Then sprinkle on panko bread crumbs. Spray with cooking spray (like Pam's) to help the bread crumbs brown.

Bake for about 30 minutes, or until top starts to brown.
