Slow Cooker Kalua Pork

I'm on a roll with easy recipes for you all, with my 3 Ingredient Beer Bread, Strawberry Bruschetta and now this easy Slow Cooker Kalua Pork! 

This recipe was inspired by our recent trip to Hawaii and the red and black sea salts I picked up when I was there. The traditional method of cooking Kalua Pork is digging a pit, and cooking the pig underground with lava rock and banana leaves all day long. I skipped digging a pit in my backyard and let my slow cooker make the magic happen.

Mr. KMW absolutely loved this pork. He requested I get the recipe posted right away so he can make it when I go out of town next week. 

The pork is versatile and you can really eat it any way you want, including Mr. KMW's go to, straight up over white rice. The first night we ate this with some rice that was leftover from the Grilled Paella we had over the weekend. Another night I threw it on a wrap with hummus, lettuce, onion and tomato. Both ways were super tasty.

3 to 4 pound pork butt or shoulder
5 garlic cloves, smashed
1 tablespoon coarse Hawaiian Red Alaea Sea Salt
1 tablespoon Black Hawaiian Sea Salt
2 tablespoons liquid smoke

Sprinkle and rub all sides of pork butt with sea salts and place in slow cooker. Add garlic and liquid smoke. Note, that this will seem like there is not a lot of liquid, but it is enough.

Cook in slow cooker on low for 12 to 16 hours. Since my slow cooker doesn't go up to 12 to 16 hours, started this before I went to bed, cooked it for 8 hours, then started my slow cooker over again in the morning, cooking for 6 more hours.

Remove pork from slow cooker and shred with forks. Serve and enjoy!
