The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.

This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.

Egg, Prosciutto & Tomato Muffins
Sriracha Meatballs

I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.

Eating & Drinking Our Way Through the Big Island

As I mentioned in my last post, we recently went on vacation in Hawaii, and had a fantastic time. Get ready for me to fill you in on the adventures, good eats, cocktails and sunsets (and cocktails at sunset). Here's the plan, I'm going to bombard you with pictures and then post all of our recommendations and favorites at the end. I hope you hold on for the entire ride!

First off, the adventures. We spent the first half of the trip driving around the island, checking out white sand beaches,

black sand beaches (shouldn't Mr. KMW be a hand model?!),

hiking around Volcano National Park,

and checking out Akaka Falls.

We were in awe of the contrasting landscapes that we saw as we drove around the Big Island.

We spent the second half of our trip, spoiling ourselves at the Four Seasons Hualalai. They had amazing customer service,

amazing pools (even one you could snorkel in!), and amazing sunsets, but what really wowed me was a huge, private outdoor shower. Totally reminded me of summers at the Jersey Shore, I'm a complete sucker for outdoor showers. Did I mention it was amazing?

You're probably wondering about the food, this is a food blog after all. Well the food was fresh and delicious, it will definitely be inspiring me in the kitchen.

Lots of Ahi,

Seafood and Kahlua Pork - I refuse to admit how many fish tacos I ate,

And one of our favorites, a traditional Loco Moco - the 2nd time Mr. KMW ate Spam in 1 day.

Before we transition from food to cocktails, I definitely recommend a visit to a local coffee farm, and drinking lots of Kona Coffee on your visit!

Should we end with the cocktails and sunsets? The pictures should say it all.

Last night of vacation #bigisland #hawaii #sunset

We really did have an amazing trip, filled with exploring and relaxation. Check out our recommendations for a Big Island Vacation below!

Favorite Beach - Hapuna State Beach Park
Hikes - Volcano National Park has a lot of hiking options, short or long depending on what you're looking for.
Coffee Farm - We visited Hula Daddy Coffee Farm near Kona
And of course relaxing at the beach and pools!

Merrimans - This was our favorite restaurant, a bit of a drive from where we were staying, but definitely worth the trip. The chef uses fresh local ingredients.
Cafe 100 - This was in Hilo, on the East side of the island, and one of our top recommendations. We had a traditional Loco Moco; white rice, a hamburger patty, spam, a fried egg and gravy. Don't worry, we split it!
Teshima's Restaurant - Stop here for a traditional Japanese breakfast!
Roy's - Order the Butterfish!
Additionally, all of the restaurants and food at the Four Seasons was delicious, and had gorgeous views of the sunset.

We stayed at two hotels during our trip, the Marriott in Waikoloa and the Four Seasons Hualalai. As I mentioned above, we highly, highly recommend staying there. It's totally worth spoiling yourself for a couple of nights!
