Slow Cooker BBQ Chicken Sweet Potato Boats
Let's talk about easy weeknight dinners. I don't know about you, but I need more of them in my life and these BBQ Chicken Sweet Potato Boats are officialy in the rotation. What's your favorite easy weeknight dinner?
I kind of cheated, I used my Slow Cooker BBQ Chicken to top a sweet potato that I cooked in the microwave...does it get any easier than that? I'm just trying to give you some proof on how versatile that slow cooker chicken is, as I pair it with my love for sweet potatoes.
You could also always buy a rotiserie chicken and toss it with some barbecue sauce, if you didn't want to go the slow cooker route.
Ingredients
1.5 pounds boneless chicken thighs (you can use breasts if you don't like dark meat)
1 onion, sliced
1-3/4 cups BBQ Sauce
3/4 cup low sodium chicken broth
2 tablespoons dijon mustard
4 garlic cloves, minced
1 tablespoon hot sauce
4 sweet potatoes
1 avocado, pitted and chopped
sour cream
Directions
Place all ingredients in the slow cooker and stir together. Cook on low for about 6 hours.
Shred chicken, as I've mentioned before a potato masher works great for this. Taste chicken and add salt or pepper if desired. Also stir in more hot sauce if you want to turn up the spice.

I love the bbq and sweet potato combination!
My boyfriend (the cook in this relationship) is out of town--what to do?! :) I made this tonight and it was both easy & tasty! I did it the "cheater" way with rotisserie chicken. I added black beans & cilantro, used Greek yogurt instead of sour cream and dusted it with cayenne. It's not a pretty dish but it was the perfectly delicious meal for one.
