Funfetti Cookie Cake

Funfetti Cookie Cake

 

Two desserts in a row for you guys, this time I decided to mix it up from my usual Chocolate & Peanut Butter Chip Cookie Cake and attempted a Funfetti Cookie Cake. Good news, it was a success. Cookie Cakes are perfect, everyone always seems to love them and they are ridiculously easy to make.

The occasion was that our good friends from New Jersey, Amanda & Pat, were visiting and it was right around Amanda's birthday. The perfect excuse to make a cookie cake. Happy Birthday Amanda!

 

Funfettie Cookie Cake 2

 

This Funfetti Cookie Cake was delicious and I'll definitely be adding it into my cookie cake rotation. Thanks to Julia over at Fat Girl Trapped in a Skinny Body, I used her Funfetti Cookie recipe to make this giant cookie.

Ingredients
2 sticks butter, softened
1-1/4 cup sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
1 egg
2-1/2 cups all purpose flour
1/4 cup cornstarch
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup rainbow jimmy sprinkles
1/4 cup rainbow perils

Directions
Preheat oven to 375 degrees.

Cream together butter and sugar with mixer. Add vanilla extract, almond extract and egg and beat together. Add flour, cornstarch, baking soda and salt and slowly mix into batter until just combined. Mix in the sprinkles.

Scoop cookie batter evenly into pizza pan and spread with a spatula until its evenly spread.

Cook for about 18 to 20 minutes or until stop starts to brown.

Eat up!
