BLT with Avocado & Barbecue Aioli

BLT with Avocado & BBQ Aioli

It's been 'hot' here in Seattle, luckily our hot doesn't compare to the rest of the country, we were hitting the high 80's. 

I love simple dinners like this BLT on hot summer nights. It's easy enough to cook up some bacon, but in our house we generally keep some cooked bacon in the freezer and then can just pop it in the microwave for about 10 seconds...making this a super easy dinner.

I kicked up the standard BLT by spreading half of an avocado on the toast and whipped up some Barbecue Aioli.

A recipe probably isn't necessary, but the below ingredients will make two sandwiches and enough for extra Barbecue Aioli...which you will definitely want!

Ingredients
1/3 cup barbecue sauce
1/4 cup mayonnaise
2 garlic cloves, minced
1 whole avocado, pitted and sliced in half
4 slices of toast
4 to 6 slices of bacon
4 tomato slices
4 slices of romaine lettuce 

Directions
Whisk together barbecue sauce, mayonnaise and garlic in a small bowl to make Barbecue Aioli.

Spread half of avocado on bottom slice of toast. Layer on bacon, tomato and lettuce. Spread top toast with Barbecue Aioli and top sandwich. Repeat process for second sandwich and enjoy!

I love adding avocado to BLTs! The barbecue aioli sounds great!
