Sweet Potato Kale Bites

Sweet Potato & Kale Balls

Just try to get past that fancy nail polish of my new KMW hand model and check out these balls of sweet potato, kale & black beans!

If you're KMW follower you have probably realized that I love Sweet Potatoes. Definitely one of my favorite sides or vegetable to incorporate into a main dish...they're healthy and tasty!

When I saw these Sweet Potato Kale Bites up on Gina's Blog, I knew I wanted to give them a try. I'm still a newbie to this whole kale scene, but I love Sweet Potatoes & Black Beans so I figured I'd give these a go and I'm very happy I did. Definitely check out Gina's blog, I'm always impressed how she comes up with healthy recipes, that also seem very satisfying.

I brought these bites to the barbecue where I made this Serrano Spinach Macaroni & Cheese. They went over really well and were a great veggie option to bring. 

The recipe made a ton (or at least my interpretation did), which was great because they were perfect to bring to work for lunch during the week.

The only change I made was I did not bake them in mini muffin tins, I just rolled them up and placed them on a cookie sheet.
