Scrambled Eggs & Smoked Salmon over Sourdough Toast
Happy Friday! I have a brunch recipe to get your weekend off to a good start!
We had a visitor in town for the weekend and I just HAD to serve him Salmon...I went with smoked. I didn't want to spend a lot of time cooking, so we could go out and explore for the day. This worked out perfect. Scramble up the eggs, toss in the smoked salmon and serve over some toasted sourdough bread. So easy and oh so good. And the lesson learned was that Smoked Salmon makes a great alternative to bacon.
As always, it will taste better if you serve it with a bloody mary!
Ingredients
6 eggs
2 tablespoons heavy cream (can substitute milk, I was going all out since we had a visitor)
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon of butter
4 to 5 ounces smoked salmon, shredded into pieces
sourdough bread, sliced and toasted
fresh dill
Directions
In a medium bowl, whisk eggs together with heavy cream, salt and pepper.
Melt butter in non stick skillet over medium low heat. Add egg mixture, stirring occasionally. Cook until the eggs reach your desired consistency.
Serve eggs over toasted sourdough bread, divide salmon evenly on top of eggs, then garnish with dill.
