Smoked Salmon Quinoa Patties


These Smoked Salmon Quinoa patties make for an excellent lunch option. I made them for a light dinner, but the leftovers were perfect served cold at lunch. I threw one over some spinach leaves and drizzled it with some Sriracha and I was ready to roll. If you're looking for a healthy option to spice up your lunch give these a try. 

I've been obsessed with quinoa in my lunches lately, this Greek Quinoa Salad from Maria over at Two Peas & Their Pod is a recent favorite. 

One last note, I just hope you're not getting sick of Smoked Salmon, because I'm definitely not!

1-1/2 cups quinoa, cooked according to package directions, cooled to room temperature
3 large eggs, beaten
6 to 8 oz smoked salmon, shredded into pieces
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons capers, drained
2 cloves garlic, minced
1/4 cup shredded parmesan cheese
1/2 cup panko bread crumbs
1 to 2 tablespoons olive oil

In a large bowl, combine quinoa, eggs, salmon, salt, pepper, capers, garlic, parmesan and panko together. If mixture seems dry, add a tablespoon of water. Form into patties and set aside.

Heat olive oil over medium to medium high heat in stove top. Once oil is heated, add patties to pan. Cook for about 8 minutes on each side, until patties are browned and cooked through.

I've made quinoa patties before and I absolutely loved it! Can't wait to try your salmon version though. I bet it's to die for!
