Grilled Portabella Mushroom Pizza with Artichokes

Portabella Mushroom Pizza

This post is going to be short and sweet. I'm exhausted from a day of eating. We went to the Food Truck Rodeo in Fremont, where we feasted on Short Rib Tacos, Pork Belly Hum Bao, Jamaican Patties, Pizza, Pulled Pork, Lumpia, Caramel and Vanilla donuts, Ice Cream, etc. Oh and we bought the tickets where you can get in early to beat the crowd, all of this started at 10 am, let's just say it was one heck of a breakfast!

I love mushrooms and I love pizza. Granted, this recipe is pretty different than actual pizza, but it involves pizza sauce and fresh mozzarella so you really can't complain. It's healthier and it's also REALLY easy to make. 

I made mine on the grill, but these can easily be made in the oven. Also, I topped mine with artichokes, but clearly you can put any topping on them.

Below is the recipe for 2 mushrooms.

2 large portabella mushrooms, cleaned and stems removed
1/3 cup pizza sauce
1/3 cup jarred artichoke hearts, oil rinsed off and chopped
1 garlic clove, minced
2 teaspoons dried basil
fresh mozzarella
olive oil
crushed red pepper (optional)
grated parmesan cheese (optional)

Heat grill to medium heat.

Brush both sides of mushrooms with olive oil, place mushrooms, stem side down and grill for 5 minutes. Flip mushrooms over. Spoon on pizza sauce, sprinkle with artichoke hearts, garlic and basil. Layer on fresh mozzarella. Close grill and cook for about 7 to 9 minutes, until mushroom is tender and cheese is melted.

Garnish with crushed rep pepper and parmesan, if desired.
