Chili Garlic Mushrooms

I hope everyone enjoyed the long weekend! We were supposed to head over to Olympic National Park for some hiking and exploring of the Pacific Coast, but Mr. KMW was feeling under the weather so we called it off. We were pretty bummed, but I took advantage of the long weekend to get in some workouts, try out some new recipes and do A LOT of shopping. At the rate I was shopping...he started feeling better real quick.

I made these Garlic Chili Mushrooms in hopes that bringing some heat would help clear up Mr. KMW's head. Or at least help him sweat out his cold. I don't know if it did the job, but I do know it satisfied our tastes! 

 

Grilled Garlic Chili Mushrooms

 

I had tested out this recipe a couple of weeks ago when my parents visited, but didn't get a picture...about 2 minutes off the grill and they were gobbled up. And since I loved them (I'm a sucker for this slimy veggie), I was eager to eat them again and also get a picture so I could share the recipe with you guys. They're super easy to throw on the grill, but you could also cook them in the oven like I did with these Garlic Roasted Mushrooms

These were a side for our Grilled Lamb Burgers, as soon as I saw the recipe for these over on Heather's blog I knew we'd be having them for dinner soon. It was hard, but I waited a whole day to make them.

 

Lamb Burger

Yes, that's Sweet Onion and Chili Ketchup dripping out of it and smothered on the bottom of that bun is a Feta Cheese spread. Make these burgers and take the extra steps to make both the ketchup and the spread.

Now for the mushroom recipe.

Ingredients
1 lb cremini mushrooms, cleaned and sliced
1/2 cup olive oil
2-3 tablespoons Chili Garlic Sauce (this can get pretty spicy, so feel free to use less)
1/2 teaspoon salt
1/2 teaspoon pepper
balsamic vinegar

Directions
In a large ziploc bag, marinate mushrooms in olive oil, chili garlic sauce, salt and pepper. Marinate in refrigerator for about 20 minutes.

Heat grill to medium high heat.

I make a tin foil plate for the mushrooms (or you can use one of those veggie trays they make for the grill). Place mushrooms on foil and place on pre-heated grill. Drizzle with balsamic vinegar and cover. Cook for about 15 to 18 minutes, stirring around a couple of times. 

Remove from grill and enjoy!

Okay - wowzers!! I love mushrooms, but chili garlic? Hellooo!!!

If you like spice, these are a must try!
