Cheesy Dorito Crunch Taco Salad

My coworkers get all of the credit for the inspiration of the Dorito crunch in this chicken salad. I'm now a couple of months into my new job, and I've never heard a group of people talk about the Taco Bell Dorito Taco so much, honestly...I'd never even heard of it before. It sounds like an excellent idea, but the consensus around my office is that it's definitely not worth driving 900 miles to eat this taco.

So I took this cheesy Dorito crunch inspiration and combined it with the Southwest Chicken Salad from Lauren's Latest (I told you I had my eye on that salad) and let the magic happen. Hey, when I said I was implementing salad night at our house, I didn't say it would necessarily be healthy salads...

Ingredients
For the Salad
1 medium romaine heart, cleaned and chopped
1-1/2 cups baby spinach, chopped
2 cups cooked chicken, shredded
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can black beans, drained and rinsed
1 cup corn
3 scallions, chopped
1 large tomato, chopped
1/2 cup cilantro, chopped
2 avocados, pitted and chopped
Cheese Doritos
For the Dressing
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon ranch seasoning
1 tablespoon taco seasoning
juice from 1 lime
1 tablespoon cholula hot sauce
salt and pepper to taste

Directions
In a large bowl combine all salad ingredients from romaine to avocados (hold out on adding the doritos).

In a smaller bowl combine all ingredients for the dressing and mix well.

Add dressing to the salad in the large bowl and toss together. Break up Doritos into pieces and place on top of salad. Enjoy!

Oh boy, oh boy: I'm definitely going to have to try this. Why? Because I love taco-y things. Because I love Doritos. Because the closest Taco Bell featuring Dorito shells is 65 miles away. Because my boyfriend will want to marry me. ;)

Question: If there's ranch in the dressing part of it, would it be good with Cool Ranch Doritos? Have you tried it?

I'm glad you're liking the recipe! I was a big fan of the cheese Doritos, but you could definitely give Cool Ranch a try...let me know how it tastes!
