Grilled Chipotle Shrimp
I don't think I shared some exciting news about our apartment in Seattle....we have a balcony, which means we have room for a grill! Where I still love my double burner grill pan and it will get a lot of use, I'm excited to have a real grill option.
We don't have a ton of space so we were looking for something smaller, but didn't want to opt for a camping or portable grill. We found this Char Broil Urban Grill, that's perfect for our space and we've been grilling up a storm!

As I continue on my shrimp kick, I have some Grilled Chipotle Shrimp for you. I'm such a sucker for chipotle flavor. The shrimp is great on its own, would be excellent for a crowd, thrown in a salad, on pizza, the list could go on. In addition to eating it straight up, I made a Chipotle Shrimp, Feta & Pineapple Flatbread that will be coming to KMW later this week!
Ingredients
1-1/2 pounds shrimp, peeled and deveined
2 chipotle peppers, chopped, plus 1/4 cup adobo sauce
5 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon brown sugar
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
skewers (if using wood skewers, be sure to soak in water)
Directions
Combine all ingredients from chipotle peppers to ground black pepper. Place marinade in large ziploc bag with shrimp and let marinate in refrigerator for about 30 minutes.
Preheat grill to medium high heat.
Place shrimp on skewers and cook on grill for about 2 to 3 minutes on each side, until opaque and just cooked through.

yum! these look good! i love anything grilled and spicy :)
We're on the same page...grill and spicy is a fantastic combination. Although, I'll pretty much take spicy anything, regardless of the grill :)
